Ingredients
Main Ingredients
- 1 tablespoon olive oil
- 1 large yellow onion, finely diced (about 1-1/2 cups)
- 1 pound lean ground beef (93/7)
- 2 teaspoons minced garlic
- 1 (16-ounce) can chili beans (or pinto beans, undrained)
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15.25-ounce) can southwestern corn (or plain corn, undrained)
- 1 (4-ounce) can mild diced green chiles
- 1 (28-ounce) can crushed tomatoes
- 2 cups chicken broth
- Chips, for serving
Seasonings
- 1 tablespoon ground chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- Salt and pepper (about 3/4 teaspoon salt and 1/2 teaspoon pepper, adjust to taste)
Toppings
- Choose your favorite toppings such as shredded cheese, sour cream, chopped cilantro, sliced jalapeños, diced avocado, or green onions
Instructions
- Cook Onion and Beef: In a large, heavy-bottomed pot, heat 1 tablespoon olive oil over medium-high heat. Add the finely diced onion and sauté until softened, about 3 minutes. Push the onions to the sides of the pot and increase heat to high. Add 1 pound ground beef to the center, breaking it up as it cooks. Cook until fully browned and no longer pink. Drain off any excess grease if necessary.
- Add Seasonings: Stir in 2 teaspoons minced garlic along with the chili powder, cumin, paprika, onion powder, garlic powder, dried oregano, salt (about 3/4 teaspoon), and pepper (about 1/2 teaspoon). Sauté the mixture, stirring constantly, until fragrant, about 1 to 2 minutes.
- Add Remaining Ingredients: Pour in the canned chili beans (undrained), black beans (drained and rinsed), southwestern corn (undrained), diced green chiles, crushed tomatoes, and 2 cups chicken broth. Stir well to combine all ingredients evenly.
- Simmer: Bring the soup mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and let it simmer uncovered for 10 to 20 minutes, stirring occasionally to prevent sticking. Taste the soup and adjust seasonings if necessary.
- Serve and Enjoy: Ladle the soup into bowls and garnish with your favorite toppings such as shredded cheese, sour cream, or chopped cilantro. Serve with chips for dipping and enjoy a delicious, comforting meal.
Notes
- Note 1: You can substitute chili beans with pinto beans if preferred; leave them undrained to retain flavor and liquid.
- Note 2: Popular toppings include shredded cheddar cheese, sour cream, fresh cilantro, sliced jalapeños, diced avocado, and green onions to enhance the flavor and texture of the soup.
- Note 3: Adjust the salt and pepper according to your taste preference during the simmering step.
