These Easy Tuna Puff Pastry Pockets are a delicious and quick lunch or snack option featuring a creamy tuna filling wrapped in flaky, golden puff pastry. With simple ingredients and minimal prep time, they make a perfect savory treat for any time of day.

  • Total Time: 20 minutes
  • Yield: 3 pockets

Ingredients

Tuna Filling

  • 1 can (5 oz) low sodium albacore tuna, drained
  • 3 tbsp Fage nonfat Greek yogurt or any yogurt
  • 2 tbsp Laura Scudder's green onion dip mix or any dip mix
  • Pinch of garlic powder
  • Cracked black pepper to taste

Puff Pastry Pockets

  • 1 sheet puff pastry, thawed
  • 1 large egg, beaten (for egg wash)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
  2. Make the Tuna Filling: In a medium bowl, combine the drained tuna, Greek yogurt, green onion dip mix, garlic powder, and cracked black pepper. Mix thoroughly until the filling is creamy and well blended.
  3. Prep the Puff Pastry: On a lightly floured surface, unroll the thawed puff pastry sheet and cut it into 6 equal rectangles to prepare for filling.
  4. Fill the Pockets: Spoon about 2-3 tablespoons of the tuna mixture onto the center of 3 puff pastry rectangles, leaving a border around the edges for sealing.
  5. Seal the Pockets: Place the remaining 3 puff pastry rectangles over the filled ones. Press the edges firmly together and crimp with a fork to completely seal the pockets and prevent filling leakage.
  6. Add Egg Wash: Brush the tops of the sealed pockets with the beaten egg to achieve a golden, glossy finish when baked.
  7. Bake: Transfer the pockets to the prepared baking sheet and bake in the preheated oven for 15 minutes or until they puff up and turn golden brown.
  8. Cool Slightly and Serve: Allow the pockets to cool for 2-3 minutes before serving to avoid burning from the hot filling. Enjoy warm or at room temperature.

Notes

  • Ensure the puff pastry is fully thawed before cutting for easier handling.
  • You can substitute the green onion dip mix with chopped fresh green onions and seasoning of choice.
  • For a crispier base, bake on a preheated baking stone or heavy baking sheet.
  • Store leftovers in an airtight container and reheat in the oven to maintain flakiness.
  • These pockets can be made ahead and refrigerated; bake just before serving.
