Delicious and easy Egg and Cheese Toasts are perfect for a quick breakfast or snack. Toasted bread is topped with a flavorful mixture of beaten eggs, grated cheese, fresh herbs, and seasoning, then baked until golden and bubbly. This simple yet satisfying recipe combines protein and cheese for a comfort-filled start to your day.

  • Total Time: 19 minutes
  • Yield: 2 servings

Ingredients

Ingredients

  • 2 Slices Bread
  • 1 Large Egg
  • 1/2 cup (2 ounces) Grated Cheese (such as cheddar, pepper jack, or gruyere)
  • 1 teaspoon finely chopped Fresh Herbs (such as thyme or rosemary)
  • Salt, to taste
  • Black Pepper, to taste
  • Pinch of Cayenne Pepper (optional)

Instructions

  1. Toast the Bread: Lightly toast the two bread slices or broil them for 1 to 2 minutes on each side until they are slightly crisp but not fully browned.
  2. Preheat Oven: Set your oven to 400°F (200°C). If using a toaster oven, place the cooking rack at the bottom position and select the BAKE setting to ensure even cooking of the toasts.
  3. Prepare Egg and Cheese Mixture: Crack the egg into a small bowl and beat it with a fork until the yolk and white are fully combined. Stir in the grated cheese and chopped fresh herbs. Season the mixture with salt, black pepper, and cayenne pepper if using. Spread this mixture evenly over the toasted bread slices, covering all the way to the crusts.
  4. Bake the Toasts: Place the prepared toasts in the oven and bake them for about 10 to 12 minutes, or until the egg and cheese mixture is puffed up, bubbly, and starting to brown lightly on top. Remove from oven and serve warm.

Notes

  • Use your favorite type of bread—sourdough or whole wheat works well for added flavor.
  • Feel free to experiment with different cheeses like mozzarella or gouda.
  • Add fresh herbs like basil or chives if you don’t have thyme or rosemary on hand.
  • For extra richness, a small pat of butter can be spread on the bread before toasting.
  • Keep an eye on the toasts during baking to prevent browning too much or burning.
