  • Total Time: 1 hour 15 minutes
  • Yield: 6 servings

Ingredients

Main Ingredients

  • 1 1/2 pounds 93% ground turkey
  • 1/2 cup quick oats (check labels for gluten free)
  • 2 tablespoons mild enchilada sauce
  • 1/2 cup chopped scallions
  • 1/3 cup corn kernels (fresh or frozen)
  • 1/4 cup canned reduced-sodium black beans (rinsed and drained)
  • 1/4 cup chopped cilantro (plus more for garnish)
  • 4 ounce can mild chopped green chili (drained well)
  • 1 clove crushed garlic
  • 1 large egg (beaten)
  • 1 1/2 teaspoons kosher salt
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon onion powder

Topping Ingredients

  • 2/3 cup mild enchilada sauce
  • 1/3 cup Mexican cheese blend
  • 1 jalapeño sliced thin (optional)

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and line a sheet pan with parchment paper to prevent sticking and ease cleanup.
  2. Mix the meatloaf base: In a large bowl, combine the ground turkey, quick oats, 2 tablespoons of mild enchilada sauce, chopped scallions, corn kernels, drained black beans, chopped green chilies, crushed garlic, beaten egg, kosher salt, ground cumin, and onion powder.
  3. Form the meatloaf: Using clean hands, thoroughly mix all ingredients until well combined. Shape the mixture into an oval loaf on the prepared sheet pan, flattening the top to create an even surface for the toppings.
  4. Bake the meatloaf: Place the sheet pan in the oven and bake the meatloaf for 55 to 60 minutes until it’s cooked through and reaches an internal temperature of 165°F (74°C).
  5. Add toppings: Remove the meatloaf from the oven and spoon the remaining 2/3 cup of enchilada sauce evenly over the top. Sprinkle with the Mexican cheese blend and arrange the thinly sliced jalapeño over the cheese if using.
  6. Melt the cheese: Return the meatloaf to the oven and bake for an additional 5 to 10 minutes, or until the sauce is warmed through and the cheese is melted and bubbly. Garnish with extra chopped cilantro if desired.
  7. Serve: Transfer the meatloaf to a cutting board and slice into 12 servings. Serve with extra enchilada sauce if you like for added flavor and moisture.

  • This meatloaf pairs well with a side of Mexican rice or a fresh green salad.
