Ingredients
Dough
- 3/4 cup whole milk
- 1/4 cup heavy cream
- 2 1/4 tsp instant yeast (rapid rise yeast)
- 2 Tbsp honey
- 1/4 cup butter
- 1/3 cup granulated sugar
- 2 eggs
- 3/4 tsp salt
- 1 tsp vanilla extract
- 4 - 4 1/2 cups all purpose flour
Filling
- 6 Tbsp butter, softened
- 2/3 cup brown sugar
- 1/3 cup granulated sugar
- 2 Tbsp cinnamon
Before Baking
- 1/3 cup heavy cream
Frosting
- 4 oz cream cheese, softened to room temperature
- 2 Tbsp butter, softened to room temperature
- 1 cup powdered sugar
- 1/4 tsp salt
- 1 tsp vanilla extract
Instructions
- Warm the liquids: Warm milk, heavy cream, butter, and honey until lukewarm, about 100 to 114 degrees Fahrenheit. You can do this on the stove or in the microwave.
- Combine wet ingredients: Pour the warm mixture into the bowl of your stand mixer fitted with the paddle attachment.
- Add yeast and sugar: Sprinkle yeast and granulated sugar over the liquid mixture and let sit for 5 minutes to activate the yeast.
- Add eggs and flavorings: Mix in the eggs, vanilla extract, and salt thoroughly into the mixture.
- Switch to dough hook: Remove the paddle attachment and replace it with the dough hook.
- Add flour and knead: Add 4 cups of flour and mix with the dough hook for 5-7 minutes until the dough is smooth and tacky but not sticky. If sticky, add flour in 1/4 cup increments, up to 1/2 cup, to get the desired consistency.
- Shape dough ball: Turn the dough onto a lightly floured surface and form into a ball, kneading a few times by hand if desired.
- First rise: Place the dough in an oiled bowl, cover with a damp towel, and let rise in a warm place for 30-45 minutes or until doubled in size.
- Roll out dough: Once risen, roll the dough on a floured surface into a 20x15 inch rectangle.
- Spread butter: Spread softened butter over the dough, leaving about a 1/4 inch border unbuttered.
- Add cinnamon sugar: Mix brown sugar, granulated sugar, and cinnamon and generously sprinkle over the buttered dough.
- Roll into log: Roll the dough tightly from the long side into a log shape, pinching the seam together, and place seam side down.
- Cut rolls: Using a sharp serrated knife, cut the log into 12 equal pieces, trimming edges if desired for uniformity.
- Prepare baking dish: Line a 13x9 inch baking dish with parchment paper and place the cinnamon rolls evenly spaced in the dish.
- Second rise: Cover the uncooked rolls with a damp towel and let rise for 20-30 minutes until doubled in size.
- Preheat oven: Preheat your oven to 375°F (190°C).
- Add heavy cream: Drizzle 1/3 cup heavy cream evenly over the risen cinnamon rolls before baking (about 1/2 Tbsp per roll).
- Bake: Bake the rolls for 15-20 minutes until they turn lightly golden brown. Let cool for 4-5 minutes before frosting.
- Make frosting: Using a mixer, beat cream cheese and butter until smooth, then add powdered sugar, salt, and vanilla extract and mix until creamy.
- Frost rolls: Spread the cream cheese icing generously over the warm cinnamon rolls.
- Serve: Serve warm and enjoy your fluffy homemade cinnamon rolls.
Notes
- Ensure liquids are lukewarm to properly activate yeast without killing it.
- Adding flour gradually avoids dry dough and helps achieve the perfect tacky texture.
- Cover dough with a damp towel to prevent drying during rising.
- Drizzling cream over rolls before baking helps to keep them moist and tender.
- If you prefer sweeter rolls, increase the amount of brown sugar in the filling slightly.
- Use room temperature ingredients for smoother dough and frosting.
- Store leftover rolls wrapped tightly at room temperature for up to 2 days or refrigerate for longer freshness.
