Ingredients
Sausage
- 14 maple breakfast sausage links
Vegetables
- 1 red bell pepper, seeded and diced
- 1 green bell pepper, seeded and diced
- 1 medium yellow onion, peeled and diced
Cooking Oils and Seasonings
- 2 tablespoons canola oil, divided
- Salt and pepper, to taste
Eggs and Dairy
- 12 large eggs
- 2 tablespoons water
- 2 cups shredded cheddar cheese
Other
- 10 burrito-size flour tortillas
Instructions
- Cook the sausage: Follow the package directions to cook the maple breakfast sausage links in a skillet. Once cooked, remove them from the pan and let cool on a cutting board. When cool enough to handle, slice into small bite-sized pieces.
- Sauté the vegetables: Heat 1 tablespoon of canola oil in the same skillet over medium heat. Add the diced red and green bell peppers and the diced onion. Cook, stirring occasionally, until the vegetables are soft but not browned, about 5-7 minutes. Season with salt and pepper to taste. Transfer the cooked vegetables to a bowl and wipe out the skillet.
- Cook the eggs: In a bowl, beat the 12 large eggs with 2 tablespoons of water, salt, and pepper. Add the remaining 1 tablespoon of canola oil to the skillet and pour in the egg mixture. Cook the eggs over medium heat, stirring gently, to make soft scrambled eggs. Avoid overcooking to keep them fluffy and moist.
- Assemble the burritos: Lay out all 10 flour tortillas. Divide the sausage pieces, sautéed peppers and onions, scrambled eggs, and shredded cheddar cheese into 10 equal portions. Place some eggs in the center of each tortilla, then layer on sausage, vegetables, and cheese. Roll each tortilla by tucking one end over the filling, folding in the sides, and rolling up tightly to form a burrito.
- Freeze the burritos: Place the assembled burritos on cookie trays and freeze until firm. Once frozen, individually wrap each burrito in foil and place them in freezer bags for storage.
- Reheat and serve: When ready to eat, remove a burrito from the freezer and unwrap the foil. Wrap the burrito loosely in a paper towel and microwave on high for about 2 minutes or until heated through and the cheese is melted. Let it sit for 1 minute before serving.
Notes
- Use foil and airtight freezer bags to prevent freezer burn and preserve freshness.
- Microwave times may vary depending on your appliance; adjust accordingly.
- You can customize these burritos by adding salsa, hot sauce, or avocado when serving.
- To avoid sogginess, allow burritos to cool completely before freezing.
- For a gluten-free option, substitute flour tortillas with gluten-free tortillas.
