Ingredients
Crust
- Cooking spray
- 1 (16-ounce) package prepared sugar cookie dough (cold, or homemade crust as an option)
Frosting
- 1 (8-ounce) package cream cheese (brick-style, full-fat, softened)
- 5 tablespoons unsalted butter (at room temperature)
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
- 1/16 teaspoon salt
Topping
- 3 to 4 cups fresh fruit (strawberries, raspberries, kiwi, blackberries, blueberries, mandarin oranges)
- 1/3 cup apricot preserves
- 2 teaspoons water
Instructions
- Prepare Pan: Preheat the oven according to cookie dough package directions. Generously spray an 11-inch tart pan with cooking spray and place it on a large sheet pan, then set aside.
- Form Crust: Unwrap the cold sugar cookie dough and press it evenly into the prepared tart pan, pushing the dough up the sides about three-quarters of the way to create a crust.
- Bake Crust: Bake the crust in the oven for 18–22 minutes or until the edges and center are very lightly golden brown. Avoid overbaking. Remove from oven and allow to cool completely.
- Soften Cream Cheese: Remove the cream cheese from its package and place it on a microwave-safe plate. Heat in 15–20 second bursts until softened but not melted.
- Make Frosting: Using a stand mixer with a whisk attachment or a hand mixer, cream together the softened cream cheese and room-temperature butter on medium speed until smooth. Add vanilla extract and salt. Gradually add powdered sugar while mixer runs on low and beat until smooth but do not whip.
- Chill Frosting: Refrigerate the cream cheese frosting for 20–30 minutes to allow it to firm up slightly and the flavors to meld.
- Assemble Pizza: Spread the chilled frosting generously over the cooled cookie crust. Arrange fresh fruit decoratively on top as desired.
- Prepare Glaze: In a small microwave-safe bowl, combine apricot preserves and water. Microwave for 10–15 seconds and stir until smooth.
- Brush Glaze: Using a pastry brush, lightly brush the apricot glaze over the arranged fruit to add shine and sweetness.
- Serve or Store: Serve immediately, or cover and refrigerate. Best enjoyed the same day but can be stored in the fridge.
Notes
- You can substitute the prepared cookie dough with a homemade sugar cookie crust if preferred.
- The frosting’s leftover cream cheese frosting pairs wonderfully with pancakes, waffles, or as a spread.
- Choose fresh, ripe fruit for best flavor and appearance.
- Do not overbake the crust; it should be lightly golden to keep a tender texture.
- For easier slicing, chill the assembled pizza before serving.
