These Funfetti Cake Mix Cookies are a quick and delightful treat combining the colorful charm of funfetti cake mix with the ease of cookie preparation. Perfectly soft, slightly chewy cookies speckled with vibrant sprinkles, ideal for celebrations or a fun everyday dessert.

  • Total Time: 25-30 minutes
  • Yield: 20 servings

Ingredients

Cookies

  • 15.25 ounce box funfetti cake mix
  • 1/2 scant cup vegetable oil (or 7 tablespoons melted butter)
  • 2 large eggs
  • Extra sprinkles (optional, for mixing in and rolling)

Instructions

  1. Prep. Preheat your oven to 350°F (175°C). Line a baking sheet with a silicone mat or parchment paper to prevent sticking and set aside.
  2. Combine cookie dough. In a large bowl, use electric beaters to mix the funfetti cake mix, vegetable oil (or melted butter), and eggs until fully combined. If you want extra sprinkles, gently fold them in now. Refrigerate the dough for 15-20 minutes to firm it up for easier handling.
  3. Scoop and bake. Using a medium cookie scoop or spoon, portion the dough onto the prepared baking sheet. If desired, roll each dough ball in additional sprinkles for extra festive color. Bake in the preheated oven for 8-10 minutes, or until the edges are just set but the cookies have not browned. Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack to cool completely.

Notes

  • For a buttery flavor, substitute the vegetable oil with melted butter.
  • Do not overbake; cookies should be set but not browned for a soft texture.
  • Refrigerate the dough to make scooping easier and prevent spreading.
  • Extra sprinkles can be mixed into the dough or rolled on the cookie tops for added color and fun.
