Garlic bread rolls are soft, fluffy dinner rolls infused with fresh garlic in the dough and finished with a flavorful garlic herb butter brush after baking. Perfect as a savory appetizer or side dish with an irresistible aroma and tender crumb.

  • Total Time: 1 hour 50 minutes
  • Yield: 12 servings

Ingredients

Dough

  • 4 1/2 tablespoons unsalted butter (60 g)
  • 2 tablespoons minced garlic
  • 3 1/2 cups + 1 tablespoon all-purpose flour (434 g)
  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon granulated sugar (15 g)
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1 cup whole or 2% milk, warmed to 110°F (225 g)
  • 1 large egg, room temperature (55 g)
  • 1 beaten egg, for brushing the tops

Garlic Butter

  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh parsley
  • Flaky sea salt, for finishing (optional)

Instructions

  1. Prepare the baking pan: Lightly butter the bottom and sides of a 9×13 inch baking pan and set aside for later use.
  2. Make the garlic butter mixture: In a small pot, melt 4 1/2 tablespoons unsalted butter and add 2 tablespoons minced garlic. Cook for 1-2 minutes until the garlic is fragrant, then remove from heat and let cool while measuring other ingredients.
  3. Combine dry ingredients: In a stand mixing bowl, whisk together 3 1/2 cups + 1 tablespoon all-purpose flour, 3 tablespoons chopped fresh parsley, 1 tablespoon granulated sugar, 2 1/4 teaspoons instant yeast, and 1 teaspoon fine sea salt.
  4. Add wet ingredients and garlic butter: Add the warmed milk (110°F), 1 large room-temperature egg, and the cooled garlic butter mixture into the bowl with dry ingredients.
  5. Knead the dough: Using a dough hook attachment on low speed, knead the dough until smooth, soft, and slightly tacky, about 10-12 minutes. If too sticky, gradually add flour one tablespoon at a time until workable.
  6. Shape the rolls: Divide the dough into 12 equal portions (about 67 grams each), shaping each into a smooth ball. Pinch the seam at the bottom to secure the shape, then place them evenly spaced in the prepared baking pan.
  7. Proof the dough: Cover the pan tightly with plastic wrap or a clean kitchen towel, and set in a warm place until the rolls double in size, approximately 1-2 hours.
  8. Preheat the oven: Heat the oven to 350°F (180°C) while the dough is rising.
  9. Brush with egg wash and bake: Brush the tops of the risen rolls with the beaten egg. Bake in the preheated oven for 20-30 minutes until golden brown on top.
  10. Prepare garlic herb butter: While the rolls bake, melt 2 tablespoons unsalted butter in a pot, add 1 tablespoon minced garlic, and cook for 1-2 minutes until fragrant. Remove from heat and stir in 1 tablespoon chopped fresh parsley.
  11. Finish the rolls: Remove rolls from the oven and immediately brush generously with the prepared garlic herb butter. Optionally sprinkle flaky sea salt on top.
  12. Serve warm: Let the rolls cool slightly and serve warm for best flavor and softness.

Notes

  • Use a kitchen scale for accurate dough portioning to get evenly sized rolls.
  • If dough feels too sticky during kneading, add flour one tablespoon at a time to reach manageable consistency without making it too dense.
  • Ensure milk is warmed to around 110°F to activate yeast without killing it.
  • For extra garlic flavor, add a bit more minced garlic in the dough or garlic butter.
  • Cover dough well during rising to prevent drying out the surface.
  • Optionally serve with extra garlic butter on the side for spreading.
