Pillowy soft, from-scratch garlic butter dinner rolls drenched in flavorful garlic butter and topped with fresh parsley and sea salt. These easy dinner rolls are perfect as a side dish for pasta, soups, or roasted meats, offering a comforting, buttery, and savory addition to any meal.

  • Total Time: 3 hours 5 minutes
  • Yield: 12 rolls

Ingredients

For the dough

  • 1 cup warm milk (about 110ºF)
  • 2 teaspoons active dry yeast
  • 1 tablespoon white granulated sugar
  • 3 ¼ cups all-purpose flour or bread flour (spooned and leveled)
  • 1 teaspoon salt
  • ¼ cup unsalted butter, melted
  • 1 large egg, at room temperature (for the dough)
  • 1 large egg, beaten (for egg wash)

For the garlic butter topping

  • ¼ cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • Sea salt to taste

Instructions

  1. Activate the yeast: In a large mixing bowl of a stand mixer fitted with the dough hook attachment, combine warm milk (110ºF), active dry yeast, and white sugar. Whisk together and cover. Let it sit for 5 minutes until the mixture becomes frothy, indicating the yeast is active.
  2. Make the dough: Add the flour, salt, melted butter, and one egg to the frothy yeast mixture. Use a handheld whisk or mixer to combine until a shaggy dough forms.
  3. Knead the dough: Turn the mixer to its slowest speed and knead the dough with the dough hook for 10 minutes until smooth and elastic. If sticky, add flour one tablespoon at a time and continue kneading. Test by pressing the dough with a finger; the indentation should slowly bounce back.
  4. First rise: Lightly oil a large bowl, transfer the dough into it, cover with cling wrap, and place in a warm spot for 1 to 1 ½ hours or until doubled in size.
  5. Prepare baking pan: Grease a 9"x13" baking pan with olive oil to prevent sticking.
  6. Shape the rolls: After the dough has risen, punch down to release air, divide into 12 equal portions (weigh if needed), and roll each into a smooth ball. Arrange the rolls in the prepared baking pan leaving space between each.
  7. Second rise: Cover the pan with cling wrap and let the dough rise again in a warm place for 1 to 2 hours until the rolls have puffed and joined together.
  8. Preheat oven and apply egg wash: Preheat oven to 350ºF (175ºC). Brush the tops and sides of the rolls with the beaten egg to create a golden crust.
  9. Bake the rolls: Bake in the middle of the oven for 20 to 25 minutes, until the rolls are lightly golden brown and fully cooked through.
  10. Prepare garlic butter: While baking, melt butter in a small saucepan over low heat. Add minced garlic and cook gently for 2 minutes, stirring until fragrant but not browned.
  11. Brush with garlic butter and garnish: Remove rolls from the oven and immediately brush with warm garlic butter. Sprinkle chopped fresh parsley and sea salt on top for garnish and extra flavor.

Notes

  • Ensure the milk is warm but not hot (about 110ºF) to activate the yeast properly.
  • You can substitute all-purpose flour with bread flour for a chewier texture.
  • If dough is too sticky, gradually add flour but avoid adding too much to keep rolls soft.
  • Use a kitchen scale to weigh dough portions for uniform roll size.
  • Brush the rolls with egg wash for a shinier, golden crust.
  • Do not burn the garlic when making the topping; cook it gently on low heat.
  • These rolls are best enjoyed fresh but can be stored in an airtight container for 2 days or frozen for longer storage.
