Ingredients
Dry Ingredients
- 3 cups all-purpose flour
- 2 teaspoons salt
- 1/2 teaspoon yeast
Wet Ingredients
- 1 ½ cups lukewarm water (70-80°F)
Flavorings
- 2 tablespoons Italian seasoning
- 5 cloves garlic, smashed into small pieces
Instructions
- Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, salt, and yeast until thoroughly combined.
- Add Water and Form Dough: Pour in the lukewarm water and mix until a shaggy, sticky dough forms. No kneading is required.
- Cover and Rest: Cover the bowl with greased plastic wrap and set aside at room temperature to ferment for 12 to 18 hours, ideally overnight, allowing the dough to rise and develop flavor.
- Prepare Dough for Baking: When ready to bake, sprinkle the Italian seasoning and smashed garlic evenly over the surface of the dough.
- Preheat Oven and Dutch Oven: Preheat your oven to 450°F (232°C). Place a cast iron Dutch oven with its lid inside to heat for 30 minutes, making sure it is fully heated.
- Shape the Dough: Lightly flour a movable surface such as parchment paper or a cutting board. Using heavily floured hands, transfer the dough onto this surface and shape it gently into a round ball. Cover loosely with greased plastic wrap and let rest while the Dutch oven heats.
- Bake the Bread Covered: Carefully remove the hot Dutch oven from the oven, place the dough inside (with parchment paper if used), cover with the lid, and return it to the oven. Bake covered for 30 minutes to create steam and develop a crust.
- Bake the Bread Uncovered: After 30 minutes, remove the lid and bake the bread uncovered for an additional 10 minutes to brown and crisp the crust.
- Cool and Serve: Remove the bread from the oven and transfer it to a cooling rack. For softer bread, allow it to cool for 5 minutes and then place in a plastic bag without sealing. For a crustier finish, let the bread cool completely at room temperature uncovered.
Notes
- Using a Dutch oven or heavy cast iron pot is key to achieving a crusty artisan bread due to the retained steam inside the pot.
- The long rise time is essential for gluten development and flavor, despite no kneading.
- Flavor the bread by sprinkling garlic and Italian herbs right before baking to prevent burning and maximize aroma.
- Adjust water temperature to lukewarm (70-80°F) to activate the yeast properly without killing it.
- This bread keeps well wrapped at room temperature for up to two days and can be frozen for longer storage.
