Ingredients
Chicken Wings
- 3 pounds chicken wings (wings and drumettes)
- 1 tablespoon baking powder (optional, do not use baking soda)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- 1½ teaspoons salt (divided)
- 1 teaspoon black pepper (divided)
Sauce
- 1 tablespoon olive oil
- 5 cloves garlic (minced)
- 5 tablespoons butter
- ⅓ cup freshly grated Parmesan cheese (plus more for serving)
- 2 tablespoons fresh parsley (minced)
- 3-4 dashes hot sauce (optional)
Instructions
- Preheat and Prepare: Preheat the oven to 400°F. Line a large rimmed baking sheet with foil and place a wire rack on top, greasing it well. If you don’t have a rack, line the sheet with parchment paper and spray with nonstick spray.
- Dry the Wings: Pat the chicken wings very dry using paper towels to ensure crispiness when baked, then transfer them to a large mixing bowl.
- Mix Seasonings: In a small bowl, combine baking powder, garlic powder, onion powder, paprika, 1 teaspoon salt, and ½ teaspoon black pepper.
- Coat Wings: Sprinkle the seasoning mixture over the wings and toss thoroughly until all wings are evenly coated.
- Bake the Wings: Arrange the wings in a single layer on the wire rack, making sure not to overlap. Bake in the preheated oven for 40 minutes, flipping the wings halfway through. Bake until the skin is golden, crisp, and the internal temperature reaches at least 175°F.
- Broil for Crispiness: Switch the oven to broil on high and cook the wings for an additional 3-4 minutes until they are browned and extra crispy, watching carefully to avoid burning.
- Prepare Garlic Parmesan Sauce: While the wings bake, heat olive oil in a small saucepan over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, stirring constantly. Add butter and melt it, then remove the saucepan from heat.
- Mix Sauce Ingredients: Stir in freshly grated Parmesan cheese, minced parsley, optional hot sauce, and the remaining ½ teaspoon salt and ½ teaspoon black pepper into the garlic butter mixture.
- Toss Wings in Sauce: Transfer the hot, cooked wings to a large bowl, pour the garlic Parmesan sauce over them, and toss gently to coat evenly. Serve immediately with extra Parmesan as desired.
Notes

- Patting the wings dry before seasoning is crucial for crispy skin.
- Broiling the wings at the end adds extra browning and crunch.
- Adjust the amount of hot sauce in the sauce according to your spice preference.
- Serve wings immediately to enjoy maximum crispiness.
