Ingredients
For the Sauce:
- 6 garlic cloves, minced
- ¼ cup low-sodium soy sauce or tamari
- 2 tablespoons light brown sugar
- 1 tablespoon toasted sesame oil
- 1 tablespoon chili sauce, such as sambal oelek
- 1 tablespoon cornstarch
- ¼ cup water
For the Stir Fry:
- 1 tablespoon vegetable oil
- 1 red bell pepper, thinly sliced
- ½ pound asparagus, trimmed and cut into 2-inch pieces
- 1 cup snow peas
- 2 pounds large raw tail-on shrimp, peeled and deveined
For Serving (Optional):
- Cooked rice
- Chopped fresh cilantro
- Sesame seeds
Instructions
- Prepare the sauce: In a small bowl, combine the minced garlic, water, low-sodium soy sauce, light brown sugar, toasted sesame oil, chili sauce, and cornstarch. Whisk together thoroughly until the mixture is smooth and well incorporated.
- Sauté the vegetables: Heat vegetable oil in a large skillet over medium-high heat. Once the oil is shimmering, add the thinly sliced red bell pepper, trimmed asparagus pieces, and snow peas. Cook, stirring occasionally, until the vegetables begin to soften but remain crisp, approximately 3 to 4 minutes.
- Cook the shrimp: Add the peeled and deveined shrimp to the skillet with the vegetables. Continue cooking, stirring occasionally, until the shrimp turn pink and opaque, which should take about 3 to 4 minutes more.
- Add the sauce and thicken: Pour the prepared sauce into the skillet over the shrimp and vegetables. Cook while stirring occasionally until the sauce thickens and evenly coats the shrimp and vegetables, about 5 minutes.
- Serve: Serve the garlic shrimp stir fry immediately over cooked rice. Garnish with chopped fresh cilantro and a sprinkle of sesame seeds if desired for extra flavor and texture.
Notes
- For a gluten-free option, use tamari instead of regular soy sauce.
- Adjust the amount of chili sauce to control the level of spiciness.
- Make sure not to overcook the shrimp to keep them juicy and tender.
- Vegetables can be swapped or added to include broccoli, snap peas, or carrots according to preference.
- Serve with brown rice or quinoa for a healthier grain alternative.
