Ingredients
Rice and Toasting
- 1 tablespoon unsalted butter
- 10 ounces basmati rice
- 1/2 teaspoon kosher salt
- Water (to rice cooker waterline for 2 cups white rice)
Almond and Garnish
- 2/3 cup sliced almonds
- 1 tablespoon garlic infused olive oil
- 1 tablespoon finely chopped fresh parsley leaves
Instructions
- Toast the Rice: Melt the unsalted butter in a 10-inch skillet over medium heat. Once melted, add the basmati rice. Stir occasionally until the rice becomes fragrant and turns lightly golden brown. This toasting process enhances the rice's nutty flavor. Once toasted, transfer the rice into your rice cooker.
- Cook the Rice: Season the toasted rice with 1/2 teaspoon kosher salt. Add water up to the “white rice” or “2 cup” waterline in the rice cooker. Secure the lid, plug in the cooker, and activate the white rice cooking setting.
- Toast the Almonds: While the rice cooks, toast the sliced almonds in the same skillet over medium heat. Stir frequently until they become fragrant and gain a golden color. Remove from the heat and set aside to prevent burning.
- Combine and Fluff: When the rice is fully cooked, fluff it gently with a fork to separate the grains. Transfer the rice to a serving bowl. Add the toasted almonds and garlic infused olive oil, then toss everything together until evenly mixed.
- Garnish and Serve: Sprinkle the finely chopped fresh parsley over the rice for a fresh, herbal note. Serve warm as a delicious accompaniment to your main dishes.
Notes
- For extra flavor, use homemade garlic infused olive oil or make your own by gently heating garlic cloves in olive oil.
- If you don't have a rice cooker, you can cook the rice on the stovetop, adjusting water according to package instructions.
- Be careful not to burn the almonds when toasting; keep them moving in the pan until golden.
- This dish pairs well with grilled meats, roasted vegetables, or curries.
- Leftovers can be refrigerated and gently reheated with a splash of water to keep rice fluffy.
