This Gingerbread Chia Pudding is a creamy and healthy make-ahead breakfast or snack that perfectly captures the festive flavors of gingerbread cookies. Made with chia seeds soaked in spiced milk sweetened with maple syrup and molasses, it offers a nutritious and delicious treat for any time of day.

  • Total Time: 4 hours 5 minutes
  • Yield: 4 servings

Ingredients

Chia Pudding

  • 1½ cups milk or non-dairy milk
  • 6 to 7 tablespoons chia seeds
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons molasses
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon clove
  • ½ teaspoon ground ginger

Instructions

  1. Combine Ingredients: In a large bowl, add the milk (or your preferred non-dairy milk), chia seeds, maple syrup, vanilla extract, molasses, ground cinnamon, ground nutmeg, ground clove, and ground ginger. Stir thoroughly until all ingredients are evenly mixed.
  2. Initial Refrigeration: Cover the bowl with a lid or plastic wrap and place it in the refrigerator for 5 to 10 minutes. This short period allows the chia seeds to begin absorbing the liquid.
  3. Stir to Prevent Clumping: After the initial refrigeration, remove the pudding and give it a good stir to break up any chia seed clumps that may have formed, ensuring a smooth texture.
  4. Set Fully: Return the pudding to the refrigerator and let it set for at least 3 to 4 hours, or ideally overnight. During this time, the chia seeds will absorb the liquid completely and create a creamy pudding consistency.
  5. Serve: When ready to enjoy, give the pudding a final stir and add your favorite toppings such as fresh fruit, nuts, or a drizzle of additional maple syrup if desired.

Notes

  • You can use any type of milk including almond, coconut, soy, or dairy milk depending on your preference.
  • For thicker pudding, use 7 tablespoons of chia seeds; reduce slightly for a looser texture.
  • Adjust the sweetness by adding more or less maple syrup or molasses according to taste.
  • This pudding can be prepared up to 3 days in advance and kept refrigerated.
  • Add toppings like fresh berries, chopped nuts, shredded coconut, or a dollop of yogurt to enhance flavor and texture.
