Ingredients
Fries
- 3 large russet potatoes (about 2 pounds), peeled and cut into ⅓-inch sticks
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon sea salt
- Freshly cracked black pepper, to taste
- 1 ½ teaspoons dried oregano
- Fresh parsley, for serving (optional)
Feta Dip
- 6 ounces feta cheese, crumbled (reserve 2 ounces for fries)
- ¾ cup plain Greek yogurt
- 2 tablespoons whole milk
- 1 garlic clove, smashed
- ½ teaspoon sea salt
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 2 teaspoons dried dill
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon fresh lemon juice (from 1 lemon)
Instructions
- Soak the Potatoes: Place the peeled and cut potatoes in a large bowl filled with cold water and soak for at least 30 minutes to remove excess starch and promote crispiness. Drain and pat dry thoroughly with paper towels.
- Preheat Oven and Prepare Pan: Preheat your oven to 425°F (220°C) and position a rack in the center. Brush a rimmed sheet pan with olive oil to prevent sticking.
- Toss and Bake the Fries: Arrange the dried potato sticks evenly on the sheet pan. Drizzle with olive oil, sprinkle with sea salt, freshly cracked black pepper, and dried oregano. Toss to coat all pieces evenly and spread them in a single layer without overcrowding. Bake for 10 minutes.
- Prepare the Feta Dip: While the fries bake, combine 4 ounces of crumbled feta, Greek yogurt, whole milk, smashed garlic, sea salt, onion powder, garlic powder, dried dill, dried basil, dried oregano, olive oil, and fresh lemon juice in a food processor or blender. Blend until smooth and creamy.
- Increase Oven Temperature and Continue Baking: After 10 minutes, increase the oven temperature to 450°F (232°C) and bake the fries for another 10 minutes to enhance crispiness.
- Broil for Extra Crispiness: Turn on the broiler. Broil the fries until they begin to brown and crisp, about 3 to 5 minutes. Remove from the oven, toss the fries for even cooking, then broil for another 3 to 5 minutes or until they reach your desired level of crispiness.
- Finish and Serve: Remove the fries from the oven and immediately sprinkle with the reserved 2 ounces of crumbled feta and fresh parsley if desired. Serve hot alongside the creamy feta dip.
Notes
- Soaking the potatoes in cold water helps remove starch, resulting in crispier fries.
- Make sure to dry the potatoes completely before baking to avoid sogginess.
- Do not overcrowd the baking sheet; this ensures even cooking and crisp edges.
- Adjust the broiling time based on your oven’s intensity and your preference for crispiness.
- The feta dip can be prepared in advance and stored in the refrigerator for up to 2 days.
- Fresh herbs like parsley add a nice burst of color and freshness when serving.
