Ingredients
Vegetables
- 2 lbs potatoes, peeled and cut into small cubes (1 kilogram)
- 1 red capsicum (bell pepper), cut into cubes
Spices & Seasonings
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon oregano
- ¼ teaspoon cinnamon
- ½ teaspoon ground pepper
Other Ingredients
- 3 tablespoons olive oil
- Juice of ¼ lemon (plus extra for finishing)
- 2 oz feta cheese, smooth or Greek (60 grams)
- 2 tablespoons chopped parsley
Instructions
- Preheat the oven: Preheat your oven to 200°C (400°F) to prepare for roasting the potatoes and peppers evenly.
- Toss potatoes and peppers: In a large bowl, combine the cubed potatoes and red bell pepper with 1 teaspoon salt, 2 tablespoons olive oil, and the juice of ¼ lemon to coat them thoroughly.
- Prepare the baking tray and roast: Grease a large flat sheet pan or baking tray with the remaining tablespoon of olive oil. Spread the potato and pepper mixture evenly on the tray and roast on the middle shelf of the oven for 25 minutes.
- Add spices: While the potatoes roast, mix together garlic powder, onion powder, paprika, oregano, cinnamon, and ground pepper. After 25 minutes, remove the tray and sprinkle this spice mix evenly over the potatoes and peppers. Stir gently with a spatula to coat everything well.
- Continue roasting: Return the tray to the oven and roast for an additional 10-15 minutes until the potatoes develop a golden crispy edge and are tender in the middle.
- Finish and serve: Drizzle the roasted potatoes with another squeeze of lemon juice, crumble the feta cheese over the top, and sprinkle with chopped parsley before serving.
Notes
- For the best results, use starchy potatoes like russets or Yukon Golds.
- Adjust spices to taste, especially the cinnamon, which adds a unique warmth but can be omitted if preferred.
- Serve this dish warm as a side with grilled meats, seafood, or a fresh Greek salad.
- Leftovers can be refrigerated and reheated, though the potatoes may lose some crispiness.
- For a vegan version, omit feta or substitute with a plant-based cheese alternative.
