Ingredients
Wet Mixture
- 1/4 cup water
- 2 tablespoons lime juice
- 1 teaspoon lime zest
- 1 cup plain Greek yogurt
- 1/4 teaspoon coarse Kosher salt
- 1/2 cup extra-virgin olive oil
Main Ingredients
- 2 1/2 cups white bread, crusts removed and cut into 1-inch cubes (ciabatta or Italian work well)
- 1 hothouse cucumber, seeded and cut into 1-inch pieces
- 1 green bell pepper, seeded and cut into 1-inch pieces
- 4 tomatillos, husked and quartered
- 4 scallions, tops removed, cut into 1-inch pieces
- 2 jalapenos, seeded and quartered
- 3 garlic cloves, minced
Instructions
- Prepare Wet Mixture: In a small mixing bowl, whisk together water, lime juice, lime zest, Greek yogurt, kosher salt, and extra-virgin olive oil until smooth. Set this mixture aside to allow flavors to meld.
- Toss Vegetables and Bread: In a large mixing bowl, combine the bread cubes, cucumber, green bell pepper, tomatillos, scallions, jalapenos, and minced garlic. Pour the prepared wet mixture over the chopped ingredients and gently stir until everything is well coated.
- Blend the Mixture: Working in batches, transfer the vegetable and bread mixture to a food processor or heavy-duty blender. Blend each batch until smooth, ensuring a creamy consistency. Combine all blended batches together and stir thoroughly to combine.
- Chill the Gazpacho: Refrigerate the blended gazpacho until thoroughly chilled and ready to serve. This chilling step helps deepen the flavors and improve texture.
- Adjust Seasoning and Serve: Before serving, stir the gazpacho well and taste. Add additional salt if needed to enhance the brightness of the flavors. Ladle the soup into serving bowls and garnish as desired.
- Engage with the Recipe: After trying the recipe, consider leaving feedback or a rating to share how it turned out for you.
Notes
- For a smoother texture, strain the gazpacho after blending if desired.
- Adjust the amount of jalapeno according to your preferred spice level.
- Ciabatta or Italian bread is recommended as it absorbs liquid well without becoming too mushy.
- Gazpacho can be prepared up to one day in advance and kept refrigerated.
- This soup can be garnished with fresh herbs like cilantro, diced avocado, or a drizzle of olive oil.
