Ingredients
For the pickled onions and radish:
- 1 cup daikon radish, julienned
- 1 small white onion, sliced
- 2 teaspoons sugar
- 1 teaspoon salt
- 1/4 cup white balsamic vinegar
- 1/2 cup warm water
For the green goddess mayonnaise:
- 1/2 cup mayonnaise
- 1/4 cup packed basil leaves
- 1/4 cup packed tarragon leaves
- 1/4 cup packed chopped chives
- 2 cloves garlic, grated
- 2 teaspoons anchovy paste (or 2 anchovy fillets, chopped)
- 1/2 lemon (zest and juice)
- Salt and pepper to taste
For the green goddess sandwiches:
- 8 slices bread
- 1 (8 ounce) ball fresh mozzarella, sliced
- 1 large tomato, sliced
- 1 avocado, sliced
- 1 cup baby spinach (or 4 leaves lettuce)
- 1 cup micro-greens or sprouts
Instructions
- Prepare the pickled onions and radish: In a bowl, combine the julienned daikon radish, sliced white onion, sugar, salt, white balsamic vinegar, and warm water. Mix well to dissolve sugar and salt, then let the mixture sit for at least 30 minutes to allow the flavors to meld and the vegetables to pickle slightly.
- Make the green goddess mayonnaise: In a food processor, combine the mayonnaise, basil leaves, tarragon leaves, chopped chives, grated garlic, anchovy paste (or chopped anchovy fillets), lemon zest, and lemon juice. Blend until smooth. Season with salt and pepper to taste. Optionally, stir in grated Parmigiano Reggiano cheese for added richness.
- Assemble the sandwiches: Lay out the bread slices and spread a generous amount of the green goddess mayonnaise on each slice. Layer with fresh mozzarella slices, tomato slices, avocado slices, baby spinach or lettuce leaves, pickled onions and radish, and micro-greens or sprouts. Top with another slice of bread. Serve immediately and enjoy the fresh, herbaceous flavors.
Notes
- The pickled onions and radish can be prepared ahead of time and refrigerated to deepen the flavor.
- Using a green heirloom tomato adds to the green theme of the sandwich, but any ripe tomato will work.
- Adding grated Parmigiano Reggiano to the mayonnaise adds a nice umami boost.
- This sandwich is best eaten fresh to enjoy the crisp textures and vibrant flavors.
