Ingredients
Balsamic Reduction
- ¾ cup balsamic vinegar
- 1 tablespoon sugar or honey (optional)
Asparagus
- 1 pound asparagus, trimmed
- 1 tablespoon extra-virgin olive oil, plus more for serving
- ½ teaspoon sea salt
- ¼ teaspoon freshly cracked black pepper
Garnishes
- ⅓ cup balsamic reduction (prepared from above)
- ¼ cup pine nuts, toasted
- Freshly grated Parmesan cheese
Instructions
- Make the balsamic reduction: In a small saucepan over medium heat, combine the balsamic vinegar and sugar or honey if using. Bring the mixture to a simmer, then reduce the heat to medium-low and cook, stirring occasionally, until thick enough to coat the back of a spoon, about 15 minutes. Remove from heat and let it cool; it will continue to thicken as it cools. Store any leftovers in an airtight container in the refrigerator for up to 2 weeks.
- Prepare and grill the asparagus: While the balsamic reduction is cooking, heat a grill or grill pan over high heat. Toss the trimmed asparagus with 1 tablespoon of extra-virgin olive oil, sea salt, and freshly cracked black pepper until evenly coated. Place the asparagus spears on the hot grill and cook for 3 to 4 minutes per side, or until they become tender and have nice grill marks.
- Garnish and serve: Transfer the grilled asparagus to a serving platter. Drizzle generously with the cooled balsamic reduction and a little extra olive oil. Sprinkle the toasted pine nuts and freshly grated Parmesan cheese over the top. Serve warm as a flavorful side dish to complement your meal.
Notes
- For a sweeter balsamic reduction, add honey instead of sugar or omit the sweetener altogether for a tangier taste.
- Ensure the asparagus is trimmed properly by snapping off the woody ends before grilling.
- To toast pine nuts, heat them in a dry skillet over medium heat for 3-5 minutes, stirring frequently until golden and fragrant.
- You can prepare the balsamic reduction ahead of time to save time on grilling day.
- For a vegan version, omit the Parmesan cheese or substitute with a plant-based alternative.
