Grilled Avocados offer a delightful twist on traditional avocado dishes by infusing smoky flavors from the grill and topping them with zesty salsa and melted cheese. This easy-to-make appetizer or side dish is perfect for summer gatherings and can be served immediately for a warm, creamy treat.

  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

Avocados

  • 2 ripe avocados

Seasoning & Toppings

  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1/4 teaspoon kosher salt
  • 1/4 cup salsa
  • 1/4 cup shredded mozzarella or Monterey Jack cheese
  • fresh minced cilantro (to taste)

Instructions

  1. Prepare the Avocados: Cut the avocados in half lengthwise and carefully remove the pits. Gently scoop the flesh from the peels using a spoon, ensuring the avocado halves remain intact.
  2. Season the Avocados: Mix the olive oil with lime juice and brush this mixture over all sides of the avocado halves. Sprinkle kosher salt evenly on top to enhance the flavor.
  3. Preheat the Grill: Heat an outdoor grill to medium temperature, approximately 350-400 degrees Fahrenheit, to prepare for grilling.
  4. Grill Avocados Cut-Side-Down: Place the avocado halves cut-side-down directly on the hot grill. Grill for about 5 minutes or until the surface is nicely browned.
  5. Add Salsa and Cheese: Flip the avocados over, placing a spoonful of salsa in the center of each half. Generously top with shredded mozzarella or Monterey Jack cheese.
  6. Melt the Cheese: Close or cover the grill and continue heating the avocados for about 5 more minutes until the cheese has melted completely.
  7. Serve: Use tongs to carefully remove the avocados from the grill. Sprinkle with fresh minced cilantro and serve immediately. Optionally, plate on a bed of lettuce with extra salsa and sour cream as desired.

Notes

  • Ensure avocados are ripe but firm enough to hold shape on the grill.
  • Use a grill-safe brush to apply olive oil evenly over avocado surfaces.
  • For added flavor, try different types of cheese such as pepper jack or queso fresco.
  • You can substitute the outdoor grill with a stovetop grill pan if an outdoor grill is not available.
  • Serve immediately to enjoy the contrast of warm grilled avocado and fresh toppings.
