Ingredients
Marinade
- 1/2 cup balsamic vinegar
- 1/3 cup olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon dry rosemary or 2 tablespoons fresh rosemary
- 1 garlic clove, minced
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Beef and Vegetables
- 2 lbs top sirloin, cut into 1-inch cubes
- 2 yellow peppers, cubed
- 2 green peppers, cubed
- 1 red onion, cubed
- 1 pint cherry tomatoes
- 1 cup whole baby bella mushrooms
Instructions
- Prepare marinade: In a large bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, rosemary, minced garlic, honey, salt, and black pepper until well combined. Reserve 1/3 cup of this marinade for serving and set aside.
- Marinate beef: Add the cubed top sirloin beef to the remaining marinade in the bowl. Toss to ensure all pieces are well coated. Cover the bowl and refrigerate for 30 minutes to 1 hour to allow flavors to penetrate the meat.
- Assemble kabobs: Thread the ingredients onto skewers by alternating yellow pepper, green pepper, red onion, beef cubes, cherry tomatoes, and mushrooms. Aim for 3-4 beef pieces per skewer and continue until all ingredients are used.
- Preheat grill: Heat your grill to medium-high heat, approximately 375-400°F (190-205°C), ensuring it is hot enough for a good sear.
- Prepare grill grates: Clean the grill grates thoroughly to prevent sticking. Lightly spray with cooking spray or rub with an olive oil-soaked cloth to further prevent the kabobs from sticking.
- Grill kabobs: Place the assembled steak kabobs directly on the grill. Cook each side for about 3-4 minutes, aiming to achieve a nice char without overcooking. Total grilling time should be roughly 12-16 minutes depending on your grill and meat thickness.
- Rest and serve: Remove the kabobs from the grill and let them rest for 5 minutes to redistribute juices. Serve warm with the reserved 1/3 cup marinade drizzled over or on the side for dipping.
Notes
- You can soak wooden skewers in water for 30 minutes before assembly to prevent burning on the grill.
- Feel free to customize vegetables based on seasonality or preference (zucchini, mushrooms, or cherry peppers are great alternatives).
- Adjust marinating time; longer marination (up to 2 hours) will deepen flavor but avoid exceeding 4 hours to prevent meat texture changes.
- For safety, always ensure beef is cooked to an internal temperature of at least 145°F (63°C) and allow resting.
- If using a charcoal grill, arrange coals for indirect heat after searing to finish cooking without burning.
