These Grilled Peach and Cherry Tomato Quesadillas are a delightful summer treat combining sweet grilled peaches, juicy cherry tomatoes, and melted pepper jack cheese in crispy whole grain tortillas. A perfect balance of smoky, sweet, and savory flavors, topped with fresh cilantro and optionally served with guacamole, makes these quesadillas a unique and delicious snack or light meal.

  • Total Time: 25 minutes
  • Yield: 4 quesadillas

Ingredients

Produce

  • 1 ripe yellow peach
  • ½ red onion, sliced into 1/3-inch rounds
  • 1 cup cherry tomatoes, quartered
  • ¼ cup loosely packed cilantro leaves, finely chopped

Dairy

  • 2 cups grated pepper jack cheese

Grains

  • 4 8-inch whole grain tortillas

Oils and Condiments

  • 1 teaspoon olive oil
  • Guacamole for serving (optional)

Instructions

  1. Preheat Grill: Pre-heat a grill or grill pan over medium-high heat to prepare for grilling the fruits and vegetables.
  2. Prepare Peach Slices: Slice the yellow peach in half from pole to pole and remove the pit. Cut each half lengthwise into ½-inch slices and thread these peach slices onto metal or bamboo skewers for easy grilling.
  3. Brush and Grill: Lightly brush the peach skewers and red onion rounds with olive oil to prevent sticking. Place them on the hot grill. Cook the peaches for about 2 minutes per side until grill marks appear and the fruit softens slightly. Grill the onion rounds for about 3 minutes per side until they become slightly charred and softened.
  4. Chop Grilled Ingredients: Once grilled, roughly chop the peaches and onions to prepare the filling for the quesadillas.
  5. Assemble Quesadillas: On one half of each whole grain tortilla, evenly sprinkle ¼ cup of grated pepper jack cheese. Top this with one quarter of the chopped peaches, onions, quartered cherry tomatoes, and cilantro leaves. Add another ¼ cup of cheese on top, then fold the empty half of the tortilla over the filling to close the quesadilla.
  6. Grill Quesadillas: Place the assembled quesadillas on the grill. Cook each side for about 3 minutes until the cheese melts and the tortilla turns crisp and golden brown.
  7. Serve: Slice each quesadilla into 3 triangles and serve immediately. Optionally, add guacamole on the side for an extra festive touch and flavor.

Notes

  • Using a grill pan indoors can be a substitute if an outdoor grill is unavailable.
  • Metal or bamboo skewers should be soaked if bamboo to prevent burning.
  • Whole grain tortillas add fiber and nutrition; feel free to substitute with gluten-free tortillas if needed.
  • Guacamole is optional but recommended for added creaminess and flavor contrast.
  • Ensure the grill is properly heated before cooking for the best sear and grill marks on the fruit and onions.
