Ingredients
Shrimp Marinade
- 1 1/2 lb. jumbo shrimp, peeled, deveined, tails on
- 1 tsp. kosher salt, plus more for mango
- 1/4 cup store-bought mild jerk sauce
Sauce
- 1/4 cup store-bought mango chutney
- 2 tbsp. reduced-sodium soy sauce
- 2 tbsp. vinegar-based BBQ sauce
Skewers
- 1 large mango, peeled, cut into 1" pieces
- 3 scallions, cut into 1" pieces
- 2 tbsp. neutral oil, plus more for grill
- 2 tbsp. coarsely chopped fresh cilantro
- 10 (8") skewers
Instructions
- Marinate the Shrimp: Pat the shrimp dry thoroughly and place them in a large bowl. Season with 1 teaspoon kosher salt, then add 1/4 cup jerk sauce. Toss well to coat evenly. Cover the bowl with a lid or plastic wrap and refrigerate for at least 10 minutes, up to 1 hour, to allow the flavors to penetrate.
- Prepare the Sauce and Mango: In a small bowl, whisk together mango chutney, soy sauce, and BBQ sauce to create a glaze. In a separate medium bowl, season the diced mango with 1/4 teaspoon kosher salt and toss gently to combine.
- Assemble the Skewers: Beginning with a shrimp, thread it onto a skewer, followed by a mango piece, and then one or two scallion pieces. Repeat this pattern and finish with a shrimp on each skewer. Once all skewers are assembled, drizzle them with 2 tablespoons of neutral oil to help prevent sticking and add flavor.
- Preheat the Grill: Prepare a grill for medium heat and preheat for about 5 minutes. Alternatively, heat a grill pan over medium heat on the stovetop. Once heated, clean the grill grates or pan and grease lightly with oil to prevent sticking.
- Grill the Skewers: Working in batches to avoid overcrowding, place the skewers on the grill or grill pan. Cook the shrimp for 2 to 3 minutes per side until pink and opaque. Halfway through grilling, brush the skewers generously with the prepared chutney-BBQ sauce mixture to build flavor and caramelize the surface.
- Serve: Transfer the cooked skewers to a serving platter. Brush the skewers with any remaining sauce and sprinkle with freshly chopped cilantro for a bright, herbal finish. Serve immediately while hot and juicy.
Notes
- Soak wooden skewers in water for 30 minutes prior to grilling to prevent burning.
- You can substitute chicken or firm tofu if you prefer a different protein.
- Adjust the jerk sauce amount if you prefer more or less heat.
- These skewers pair well with coconut rice or a fresh green salad.
- Use fresh, ripe mango for the best sweetness and texture.
