Perfect for a summer barbecue or an easy weeknight dinner, the skewers are expertly grilled to achieve a delicious char and juicy interior, then garnished with fresh parsley for an added burst of freshness.

  • Total Time: 4 hours 55 minutes
  • Yield: 4 servings

Ingredients

Marinade

  • 1/2 cup balsamic vinegar
  • 1/2 cup Worcestershire sauce
  • 1/2 cup reduced sodium soy sauce
  • 2 Tbsp Dijon mustard
  • 6 cloves garlic, finely minced or grated
  • 2 Tbsp packed light brown sugar
  • 1 tsp dried parsley
  • 3/4 tsp black pepper
  • 3/4 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/3 cup olive oil

Skewers

  • 1 1/2 lbs sirloin or strip steaks, cut into 1 inch cubes
  • 8 oz cremini mushrooms (mushrooms larger than 1 inch should be cut in half)
  • 1 medium red onion, peeled and cut into 1 inch pieces
  • 1 medium green bell pepper, seeded and cut into 1 inch pieces
  • Minced fresh parsley (for garnish)

Instructions

  1. Make the marinade: In a small mixing bowl, combine 1/2 cup balsamic vinegar, 1/2 cup Worcestershire sauce, 1/2 cup reduced sodium soy sauce, 2 tablespoons Dijon mustard, 6 cloves garlic, 2 tablespoons packed light brown sugar, 1 teaspoon dried parsley, 3/4 teaspoon black pepper, 3/4 teaspoon dried thyme, and 1/2 teaspoon dried rosemary. Whisk thoroughly while gradually adding 1/3 cup olive oil until the mixture is smooth and well combined.
  2. Marinate the steak and mushrooms: Divide the marinade roughly in half and place the steak cubes into one large resealable plastic bag and the mushrooms into another. Pour half the marinade into the steak bag and half of the remaining marinade into the mushroom bag, reserving the last bit of marinade for brushing later. Massage the marinade into the steak and mushrooms, seal the bags, and refrigerate for at least 30 minutes and up to 8 hours to enhance flavor and tenderness.
  3. Prepare skewers: If using wooden skewers, soak them in water for about 30 minutes beforehand to prevent burning during grilling. If using metal skewers, this step is unnecessary. Then, assemble the skewers by alternating the marinated steak cubes, cremini mushrooms, red onion pieces, and green bell pepper pieces in any pattern you like.
  4. Preheat and oil the grill: Preheat your grill to medium to medium-high heat. Once hot, lightly brush the grill grates with vegetable or avocado oil to prevent sticking and to aid with browning.
  5. Grill the skewers: Place the assembled skewers onto the grill. Cook them for approximately 8 to 10 minutes to reach medium doneness (about 140-145°F internal temperature). Turn the skewers occasionally to achieve an even char on all sides. While grilling, brush the skewers with the reserved marinade to keep them moist and add extra flavor. Use a meat thermometer to check for desired doneness.
  6. Serve: Remove the skewers from the grill and transfer them to a platter or plates. Sprinkle with freshly minced parsley for a vibrant finish and serve warm to hot, enjoying the smoky, juicy grilled flavors.

Notes

  • Soaking wooden skewers before grilling prevents them from burning.
  • Marinating for at least 30 minutes improves flavor; marinate up to 8 hours for extra tenderness.
  • Use a meat thermometer to ensure perfect steak doneness.
  • You can customize the vegetables to your preference, substituting or adding bell peppers, cherry tomatoes, or zucchini.
  • For an extra smoky flavor, add wood chips to your grill.
