Ingredients
Wet Ingredients
- 2 eggs
- 1/2 cup melted coconut oil, or olive oil
- 1/3 cup honey or maple syrup
- 1/4 cup milk or Greek yogurt
- 1 teaspoon vanilla extract
- 1 cup mashed ripe bananas (about 2-3 medium bananas)
Dry Ingredients
- 1 3/4 cups white whole wheat flour or regular whole wheat flour, or plain all purpose flour
- 1/2 teaspoon ground cinnamon (optional)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Add-Ins (Optional)
- 1/2 cup dark chocolate chips, or chopped walnuts, or raisins
Instructions
- Preheat and prepare pan: Pre-heat your oven to 325°F (163°C). Grease a 9×5 inch loaf pan thoroughly and set it aside to prevent sticking.
- Mix dry ingredients: In a medium bowl, whisk together the flour, ground cinnamon (if using), baking soda, and salt until evenly combined. Set aside for later use.
- Combine wet ingredients: In a large mixing bowl, beat the eggs, melted coconut or olive oil, honey or maple syrup, milk or Greek yogurt, and vanilla extract for about 2 minutes until smooth and well incorporated.
- Add bananas and dry mix: Stir in the mashed bananas into the wet mixture, followed by the flour mixture. Gently fold these together until just combined. Then, add any optional mix-ins like dark chocolate chips, chopped walnuts, or raisins and fold them in evenly.
- Pour and bake: Pour the batter into your prepared loaf pan and optionally sprinkle the top with a little extra cinnamon, raw sugar, or banana slices for added texture and flavor. Place it in the oven and bake for 50 to 55 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and serve: Remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then, carefully slice and serve your delicious healthy banana bread.
Notes
- You can substitute honey with maple syrup to keep it vegan.
- Use Greek yogurt or milk as preferred for moisture; both work well.
- For a nuttier flavor, add chopped walnuts or raisins instead of chocolate chips.
- Store banana bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- To reduce calories, use olive oil instead of coconut oil and skip optional add-ins.
