Ingredients
Main Ingredients
- 3 cups chopped cooked chicken (see note 1)
- 3/4 cup thinly sliced celery (2–3 stalks)
- 1/3 cup thinly sliced green onions (5 green onions)
- 1 cup seedless red grapes (halved)
- 1/2 cup sliced almonds (see note 2 for toasting)
- 1/4 cup finely chopped fresh parsley (optional)
Dressing
- 3/4 cup Greek yogurt (see note 3)
- 1 lemon (zest and juice)
- 1 tablespoon honey
- 1 tablespoon Dijon-style mustard
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Juice Lemon: Zest the lemon using a zester to obtain about 1/2 teaspoon of zest. Then juice the lemon using a citrus juicer to get 1 tablespoon of fresh lemon juice.
- Cut Ingredients: Shred and chop the cooked chicken to measure 3 cups. Thinly slice the celery stalks, green onions, and halve the seedless red grapes. Finely chop fresh parsley if you choose to use it. Toast the sliced almonds if desired by warming them in a pan over medium heat until golden brown and fragrant.
- Whisk: In a large bowl, whisk together the Greek yogurt, lemon zest and juice, honey, Dijon-style mustard, salt, and pepper until smooth and well combined.
- Stir: Add the chopped chicken, sliced celery, green onions, grapes, toasted almonds, and chopped parsley (if using) into the bowl with the dressing. Gently stir everything together until evenly coated. Taste the salad and adjust seasoning if necessary.
- Serve: Serve the chicken salad chilled or at room temperature. It can be enjoyed on its own, as a sandwich filling, or over a bed of greens as suggested in serving notes.
Notes
- Note 1: Use leftover roasted or poached chicken, finely shredded or chopped for best texture.
- Note 2: Toast almonds by heating them in a dry pan over medium heat, stirring frequently, until fragrant and lightly browned to enhance flavor.
- Note 3: Greek yogurt adds creaminess and protein while keeping the salad healthier than traditional mayonnaise options.
- Note 4: Serve this chicken salad on whole grain bread, in a wrap, atop mixed greens, or with crackers for a versatile meal option.
