This Healthy Breakfast Oatmeal Apple Cake is a wholesome, flourless cake perfect for a nutritious start to your day. Made with oats, fresh apple, honey, yogurt, and warm spices, it offers a naturally sweet and satisfying treat that doubles as a great breakfast or a healthy dessert option. The cake is easy to prepare using a blender and baked until golden and tender, delivering a moist texture without any added refined flour.

  • Total Time: 35 minutes
  • Yield: 8 servings

Ingredients

Main Ingredients

  • 1 cup oats
  • 1 large apple, peeled and chopped
  • 3 Tbsp honey
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 3 tbsp yogurt
  • 2 eggs
  • 1 Tbsp butter or coconut oil

Instructions

  1. Preheat the oven: Set your oven to 180°C (350°F) to prepare for baking the cake.
  2. Prepare the batter: Add all the ingredients except 1/4 cup of oats into a blender or bowl if using a hand blender. Use only 3/4 cup of the oats at first. Blend or process the mixture until smooth and creamy.
  3. Mix in the remaining oats: After achieving a smooth mix, stir in the remaining 1/4 cup of oats by hand to add texture.
  4. Transfer to baking pan: Line a small-sized baking pan with parchment paper and pour the cake batter evenly into it.
  5. Bake the cake: Place the pan in the preheated oven and bake for 20-30 minutes. The cake is done when a toothpick inserted in the center comes out clean.
  6. Cool and store: Allow the cake to cool completely before slicing. Store the slices in an airtight container in the refrigerator for at least one hour; the flavors and texture improve as it chills.
  7. Serve and enjoy: Serve chilled or at room temperature as a healthy breakfast treat or a wholesome dessert.

Notes

  • You can substitute butter with coconut oil for a dairy-free version.
  • Make sure the apple is peeled and finely chopped to blend smoothly.
  • Honey adds natural sweetness; adjust the amount to your taste or substitute with maple syrup if preferred.
  • Use plain yogurt for moisture and tenderness; Greek yogurt works well too.
  • Store leftovers in the fridge and consume within 3-4 days for freshness.
