Ingredients
Base:
- 2 cups almond flour
- 1/2 cup coconut sugar
- 2 tablespoons melted coconut oil
- 2 tablespoons honey
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon powder
Filling:
- 1/3 cup honey
- 2 tablespoons melted coconut oil
- 1/2 cup coconut sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon powder
- 2 large eggs
- 1 1/4 cup raw pecans
Instructions
- Preheat and prepare pan: Preheat your oven to 350ºF (175ºC). Line a 9×9-inch square baking pan with parchment paper, ensuring some overhang to easily lift the bars out after baking.
- Make the base: In a bowl, combine almond flour, coconut sugar, melted coconut oil, honey, vanilla extract, and cinnamon powder. Whisk or stir until the mixture is wet and forms clumps.
- Bake the base: Transfer the base mixture evenly to the prepared pan and gently press down to create an even layer. Bake for 15 to 17 minutes until slightly firm and lightly golden.
- Prepare the filling: Using the same bowl, add honey, melted coconut oil, coconut sugar, vanilla extract, cinnamon powder, and eggs. Whisk until smooth. Stir in the raw pecans until they are well coated with the filling mixture.
- Assemble and bake: Remove the base from the oven, then evenly spread the pecan filling mixture over it. Return the pan to the oven and bake for an additional 16 to 18 minutes or until the filling is set and slightly golden on top.
- Cool and serve: Allow the bars to cool completely in the pan on a wire rack before slicing into 9 squares. This cooling step helps the bars firm up for clean cutting.
