Ingredients
Main Ingredients
- 1 tablespoon toasted sesame oil (or coconut oil)
- 1 - 2 garlic cloves (minced)
- 3 - 4 cups cooked quinoa (chilled)
- 1 16oz bag organic frozen veggies, any variety
- 2 large organic eggs
- 2 - 3 tablespoons gluten-free soy sauce
- 1/2 teaspoon ground ginger
Instructions
- Heat the oil and garlic: In a large skillet or wok over medium-high heat, add the toasted sesame oil and minced garlic. Stir continuously for about 30 seconds until the garlic is fragrant but not browned, releasing its aroma.
- Add quinoa and veggies: Add the chilled cooked quinoa and frozen vegetable mix to the skillet. Cook while stirring frequently until the vegetables begin to soften and everything is well coated in the sesame oil and garlic flavors, approximately 2 minutes. Push the mixture to one side of the pan.
- Cook the eggs: Crack both eggs directly into the empty side of the skillet. Using a fork or spatula, scramble the eggs until fully cooked, which should take about 1 to 2 minutes. Once cooked, stir the scrambled eggs into the quinoa and vegetable mixture to combine evenly.
- Add seasonings and finish cooking: Pour the gluten-free soy sauce over the entire mixture, then sprinkle with ground ginger. Toss everything together thoroughly, allowing the flavors to meld and the dish to heat through for another 1 to 2 minutes. Taste and adjust soy sauce or seasoning as preferred.
- Serve: Remove from heat and serve immediately while hot. Enjoy your healthy quinoa fried rice fresh for best flavor and texture.
Notes
- Use chilled quinoa to prevent clumping and to get a better fried rice texture.
- Feel free to swap the frozen veggies with fresh chopped vegetables like carrots, peas, bell peppers, or broccoli for added crunch.
- For a vegan version, omit the eggs and consider adding tofu or tempeh for extra protein.
- Adjust the amount of soy sauce depending on your salt preference and use low-sodium soy sauce for a healthier option.
- To enhance flavor, you can add chopped green onions or sprinkle toasted sesame seeds on top before serving.
