This comforting Herby Chicken Gnocchi Soup blends tender, shredded chicken with fresh gnocchi and aromatic herbs in a flavorful homemade broth. Perfect for a cozy meal, this soup offers a balance of rich protein, fresh vegetables, and delicate herbs, simmered to perfection and finished with a vibrant touch of parsley and dill.

  • Total Time: 55 minutes
  • Yield: 4 servings

Ingredients

Soup Base

  • 2 litres / 8 cups cold water
  • 2 skinless boneless chicken breasts
  • 2 skinless bone-in chicken thighs
  • 3 bay leaves
  • 4-5 peppercorns
  • 1 tsp salt
  • 1 tsp Vegeta seasoning

Vegetables and Flavorings

  • 1 tbsp butter
  • 1-2 carrots (depending on size, sliced)
  • 1 onion (chopped)
  • 1 stalk celery (diced)
  • 2 cloves garlic (pressed)

Other Ingredients

  • 200g / 7 oz fresh gnocchi
  • 1 tbsp fresh parsley (chopped)
  • 1 tbsp fresh dill (chopped)

Instructions

  1. Make the broth: In a large soup pot, combine the chicken breasts, chicken thighs, bay leaves, peppercorns, and a pinch of salt. Pour in the cold water and bring to a boil over medium heat. Once boiling, reduce the heat to a simmer, cover with a slightly ajar lid, and cook for 30 minutes. Skim off any foam that rises to the surface to keep the broth clear.
  2. Shred the chicken and strain the broth: After 30 minutes, remove the chicken pieces from the pot and set aside to cool. Remove bones and shred the meat into bite-sized pieces using two forks. Strain the broth through a fine sieve to remove the bay leaves, peppercorns, and impurities. Set the clarified broth aside.
  3. Sauté the vegetables: In the same pot, melt the butter over medium heat. Add the chopped onions, diced celery, and sliced carrots, sautéing for 5 minutes until softened. Add the pressed garlic cloves and cook for an additional 30 seconds to release the flavor.
  4. Combine and cook the soup: Pour the strained broth back into the pot with the sautéed vegetables. Stir in the Vegeta seasoning, if using. Add the shredded chicken back to the pot and bring the soup to a boil. Add the fresh gnocchi and cook for 2-3 minutes until al dente.
  5. Finish and let flavors meld: Remove the pot from heat. Stir in the chopped fresh dill and parsley, cover with a lid, and let stand for 15 minutes to allow the flavors to blend beautifully before serving.

Notes

  • Skimming the foam during simmering ensures a clear broth with better flavor and appearance.
  • You can substitute the Vegeta seasoning with your preferred chicken or vegetable seasoning or omit it for a lower sodium option.
  • If fresh gnocchi is unavailable, frozen gnocchi can be used but may require slightly longer cooking time.
  • Allowing the soup to rest after cooking enhances the herb flavors and deepens the overall taste.
  • For a richer broth, you can brown the chicken pieces before boiling, though this will alter the classic clear broth.
