Ingredients
Bang Bang Sauce
- ⅔ cup mayonnaise
- 1 tablespoon freshly squeezed lime juice
- 1½ tablespoons Thai sweet chili sauce
- ½ teaspoon sriracha
Chicken Skewers
- 1¼ pounds boneless, skinless chicken thighs
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- ¾ teaspoon paprika
- ¾ teaspoon garlic powder
- Bamboo wooden skewers (soaked in water for 30 minutes before use)
Instructions
- Prep. Preheat your grill to medium-high heat and brush the grill grates with oil to prevent the chicken from sticking.
- Make the bang bang sauce. In a bowl, whisk together mayonnaise, lime juice, Thai sweet chili sauce, and sriracha until smooth. Divide the sauce into two parts; set one part aside for serving and the other part for brushing the chicken during grilling.
- Prepare the chicken. Cut chicken thighs into 1-inch pieces. In a large bowl, toss the chicken with olive oil, paprika, and garlic powder. Season generously with salt and freshly ground black pepper to taste.
- Assemble the skewers. Thread 5 to 6 pieces of chicken onto each soaked bamboo skewer, working one skewer at a time to keep chicken secured and evenly spaced.
- Grill the chicken. Brush the chicken pieces on all sides with the prepared bang bang sauce reserved for brushing. Place the chicken skewers on the preheated grill and cook for 15 to 20 minutes, turning occasionally and brushing with more sauce as needed, until the internal temperature reaches 165ºF and the chicken is cooked through with slight char marks.
- Serve. Remove the skewers from the grill and let them rest for 5 minutes. Serve warm with the reserved bang bang sauce on the side for dipping.
Notes
- Soak bamboo skewers in water for at least 30 minutes prior to grilling to prevent burning.
- Ensure the chicken reaches the safe internal temperature of 165ºF before eating.
- Adjust the amount of sriracha based on your preferred level of spiciness.
- Can be served as a main dish with rice and vegetables or as an appetizer.
- Leftover sauce can be refrigerated in an airtight container for up to 3 days.
