This Homemade Creamy Chicken and Rice Casserole is a comforting, easy-to-make dish perfect for family dinners. Combining tender shredded chicken with creamy soups, sour cream, and rice, it bakes into a flavorful, hearty casserole that’s both satisfying and simple to prepare.

  • Total Time: 1 hour 15 minutes
  • Yield: 8 servings

Ingredients

Chicken Mixture

  • 2-3 cups cooked and shredded chicken (or diced cooked chicken)
  • 1 package Lipton Onion Soup Mix
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups milk
  • 3/4 cup sour cream
  • 1/2 cup water
  • 2 cups uncooked minute rice
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to get it ready for baking the casserole.
  2. Combine Ingredients: In a medium bowl, thoroughly mix the cooked chicken, Lipton onion soup mix, cream of mushroom and cream of chicken soups, milk, sour cream, water, uncooked minute rice, and season with salt and pepper to taste. Ensure all ingredients are evenly incorporated.
  3. Prepare Baking Dish: Lightly spray a 9x13 inch baking pan with cooking spray to prevent sticking.
  4. Transfer Mixture: Pour the combined chicken and rice mixture into the prepared baking pan, spreading it out evenly.
  5. Cover and Bake: Cover the baking pan tightly with aluminum foil to keep moisture in and place it in the preheated oven.
  6. Bake Covered: Bake the casserole covered for 45 minutes, allowing the rice to absorb the liquid and the flavors to meld.
  7. Bake Uncovered: Remove the aluminum foil and bake for an additional 15 minutes to let the top brown slightly and the casserole to firm up.
  8. Serve: Carefully remove the casserole from the oven, let it cool for a few minutes, then serve warm and enjoy your creamy chicken and rice delight.

Notes

  • You can use leftover cooked chicken or rotisserie chicken for convenience.
  • Minute rice cooks quickly and absorbs liquid well, making it ideal for this casserole.
  • Adjust salt and pepper based on your taste and the saltiness of the soup and onion mix.
  • Covering the dish while baking helps keep it moist and tender.
  • For a crispier top, you can broil the casserole for 2-3 minutes after baking uncovered, watching carefully to avoid burning.
