Ingredients
Meat
- 2-3 pounds chuck roast
Vegetables
- 2 thinly sliced onions
- 3 cloves garlic, minced
Liquids & Seasonings
- 3 cups beef broth
- 2 tablespoons red wine vinegar
- 1 tablespoon Worcestershire sauce
- ½ teaspoon dried thyme leaves
- 2 bay leaves
- Salt and pepper to taste
Optional for Thickening Gravy
- 2 tablespoons cornstarch
- ¼ cup cold water
Instructions
- Season the Roast: Generously season the chuck roast with salt and pepper to enhance the meat's natural flavor.
- Prepare the Broth Mixture: In a bowl, whisk together the beef broth, minced garlic, red wine vinegar, Worcestershire sauce, and dried thyme leaves until well combined.
- Layer Ingredients in Slow Cooker: Place half of the thinly sliced onions at the bottom of the slow cooker. Pour half of the broth mixture over the onions. Then, place the seasoned chuck roast on top.
- Add Remaining Liquids and Onions: Pour the remaining broth mixture over the roast. Top with the remaining onions and add the bay leaves for an aromatic touch.
- Cook the Roast: Cover and cook on low for 7–8 hours or on high for 4–5 hours, until the beef is fork tender and easily shredded.
- Remove and Shred the Meat: Carefully remove the roast from the slow cooker and discard the bay leaves. Use two forks to shred or cut the meat into large pieces.
- Thicken the Gravy (Optional): If you prefer a thicker gravy, whisk together cornstarch and cold water to form a slurry. Stir this into the cooking liquid in the slow cooker and cook covered for an additional 15–20 minutes until slightly thickened.
- Serve: Return the shredded beef to the slow cooker or spoon the onion gravy over the meat. Serve hot for a comforting meal.
Notes
- You can substitute the chuck roast with brisket or rump roast if preferred.
- For a deeper flavor, caramelize the onions separately before adding them to the slow cooker.
- Adjust seasoning with additional salt and pepper at the end, to taste.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
