Ingredients
Marinade and Chicken
- 6 ounces pineapple juice (1 can)
- ¼ cup vegetable oil
- ¼ cup reduced sodium soy sauce
- ¼ cup brown sugar
- ½ teaspoon garlic powder
- ¼ teaspoon ground black pepper
- 6 boneless, skinless chicken breast halves
Optional Toppings
- Pineapple slices
- Chopped green onion
Instructions
- Prepare Marinade and Marinate Chicken: In a medium bowl, combine pineapple juice, vegetable oil, reduced sodium soy sauce, brown sugar, garlic powder, and ground black pepper. Stir well to dissolve the sugar. Place the boneless, skinless chicken breasts into the bowl, making sure each piece is fully coated with the marinade. Cover the bowl and refrigerate for at least 2 hours; for best flavor, marinate for around 8 hours.
- Preheat Grill: Heat the grill to medium-high heat, ensuring it's ready for cooking the chicken evenly.
- Grill Chicken: Place the marinated chicken breasts on the preheated grill. Grill each side for approximately 5-7 minutes until the chicken is just cooked through and has lovely grill marks. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C) for safe consumption.
- Grill Pineapple Slices: While the chicken is finishing, place the pineapple slices on the grill. Cook them for one to two minutes per side until you see appealing grill marks and the pineapple is warmed and slightly caramelized.
- Assemble and Garnish: Remove both the grilled chicken and pineapple slices from the grill. Place one pineapple slice atop each chicken breast and sprinkle with chopped green onions to add a fresh, vibrant flavor. Serve immediately and enjoy!
Notes
- For the best flavor, allow the chicken to marinate for 6-8 hours, but a minimum of 2 hours will suffice.
- Use reduced sodium soy sauce to keep the sodium levels moderate.
- You can substitute vegetable oil with sesame oil for a nuttier flavor.
- Serve with steamed rice or a fresh green salad for a balanced meal.
- Check chicken internal temperature with a meat thermometer to ensure safe cooking.
- Optional pineapple slices can be omitted if you prefer the flavor without the extra sweetness on top.
