- 1/4 cup chopped cilantro
- 1/4 cup crumbled Cotija cheese
- Juice and zest from half of a lime
- 1 avocado, cut into chunks (optional)
- 1/2 teaspoon Tajín (optional and/or can just be a garnish)
Sweet Potatoes
- 2 large sweet potatoes, peeled and cubed
- 1 tablespoon olive oil
- 1 1/2 teaspoons salt
Ground Beef
- 1 tablespoon olive oil
- 1 pound ground beef
- 2-3 tablespoons taco seasoning (such as Siete mild taco seasoning)
To Serve
- Chips for serving
- Pickled red onions for serving
Instructions
- Make Street Corn Dip: Combine all ingredients for the street corn dip—cottage cheese, mayonnaise, fire-roasted corn, minced jalapeño, chopped cilantro, Cotija cheese, lime juice and zest. Blend the cottage cheese last to control the creaminess. Adjust seasoning to taste and set aside.
- Roast Sweet Potatoes: Toss the peeled and cubed sweet potatoes with olive oil and salt until evenly coated. Air fry the sweet potatoes at 375°F for 13 minutes or until tender and lightly golden. Alternatively, roast in a 400°F oven for 25 minutes.
- Cook Ground Beef: Heat olive oil in a skillet over medium-high heat. Add the ground beef in chunks and allow it to brown undisturbed for a few minutes. Then crumble the beef into smaller pieces, add taco seasoning and 2-3 tablespoons of water. Stir and cook until the beef is fully cooked and saucy.
- Assemble Bowls and Serve: Divide the roasted sweet potatoes and seasoned ground beef into bowls. Spoon generous amounts of the street corn dip on top. Garnish with avocado chunks and Tajín seasoning if desired. Serve with chips and pickled red onions on the side for an extra tangy crunch.
Notes
- You can roast sweet potatoes in the oven if you don’t have an air fryer.
- Adjust the amount of jalapeño and seasoning according to your spice preference.
- The street corn dip doubles as a tasty snack while preparing the rest of the meal.
- Avocado and Tajín are optional but add creaminess and a slight spicy kick.
- Pickled red onions provide a bright contrast but can be omitted if preferred.
