Ingredients
For the Apple Topping
- 1 lb (2-3 medium) honeycrisp or gala apples, peeled, cored, and diced into 1/2-inch cubes
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 1 teaspoon minced fresh rosemary
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
For the Brie
- 1 (8 oz) brie wheel
- 1/4 cup chopped pecans, toasted
- Additional honey for drizzling
- Crostini for serving
Instructions
- Prepare and Toss Apples: Preheat your oven to 350°F and lightly grease a 9-inch baking dish, either square or round. In a large bowl, combine the diced apples, honey, lemon juice, fresh rosemary, and the ground spices (cinnamon, cloves, nutmeg, and allspice). Toss well until the apples are evenly coated with the mixture.
- Bake Apples: Spread the apple mixture in a single layer in the prepared baking dish. Increase the oven temperature to 400°F and bake the apples for 10-15 minutes until they become crisp-tender. Remove the dish from the oven and reduce the oven temperature back down to 350°F.
- Add and Bake Brie: Place the brie wheel in the center of the baking dish on top of the apples. Return the dish to the oven and bake for an additional 10-15 minutes at 350°F, or until the brie is soft and slightly melted in the center when gently pressed.
- Finish and Serve: Remove the baking dish from the oven. Sprinkle the toasted chopped pecans evenly over the baked apples and brie. Drizzle additional honey over the top for extra sweetness. Serve warm with crostini for dipping and enjoy this comforting and flavorful appetizer.
Notes
- Use firm apples such as Honeycrisp or Gala for the best texture.
- To toast pecans, spread them on a baking sheet and bake at 350°F for about 5-7 minutes until fragrant and slightly browned.
- If desired, you can substitute rosemary with thyme for a different herb flavor.
- Serve immediately for best results, as the baked brie is best enjoyed warm and melty.
- Leftovers can be refrigerated and gently reheated before serving.
