Ingredients
Chicken and Coating
- 1 1/2 pounds boneless, skinless chicken breasts or thighs (cut into 1-inch chunks)
- 1 tablespoon BBQ seasoning
- Kosher salt and freshly ground black pepper (to taste)
- 1 cup buttermilk
- 1 large egg
- 6 cups cornflakes (lightly crushed)
- 3 tablespoons vegetable oil
- 3/4 cup all-purpose flour
- Nonstick cooking spray
Honey BBQ Sauce
- 1 cup BBQ sauce
- 2 tablespoons honey
- 1/2 teaspoon apple cider vinegar
- 1/4 teaspoon hot sauce (optional)
Instructions
- Preheat Oven and Prepare Rack: Preheat your oven to 425°F (220°C). Coat a cooling rack with nonstick spray and place it on a baking sheet; this will help ensure the chicken cooks evenly and crisps up nicely.
- Season Chicken: In a large bowl, combine the chicken chunks with BBQ seasoning, 1/2 teaspoon kosher salt, and 1/2 teaspoon freshly ground black pepper. Toss to coat the pieces evenly.
- Make Buttermilk Mixture: In a medium bowl, whisk together the buttermilk and egg until fully combined. This mixture will help the coating stick to the chicken.
- Prepare Cornflake Coating: In a large bowl, combine the lightly crushed cornflakes with vegetable oil. Season with salt and pepper to taste. This will create a crunchy, flavorful crust.
- Coat the Chicken: Working one piece at a time, dredge the chicken in the flour first, shaking off excess, then dip into the buttermilk and egg mixture. Finally, press the chicken chunks into the cornflake mixture to coat thoroughly.
- Arrange for Baking: Place the coated chicken pieces in a single layer on the prepared baking rack. Spray the tops lightly with nonstick cooking spray to help them crisp up in the oven.
- Bake: Bake in the preheated oven for about 15-18 minutes, or until the chicken is cooked through and the coating is crispy and golden brown.
- Prepare Honey BBQ Sauce: While the chicken bakes, combine the BBQ sauce, honey, apple cider vinegar, and hot sauce (if using) in a small saucepan over medium heat. Warm for 2-3 minutes until heated through and slightly thickened.
- Toss Chicken in Sauce: Once the chicken bites are out of the oven, place them in a large bowl and gently toss with half of the warm honey BBQ sauce to coat them evenly.
- Serve: Serve the chicken bites immediately with the remaining honey BBQ sauce on the side for dipping.
Notes
- For extra crispiness, use skinless chicken thighs instead of breasts as they tend to stay juicier.
- If you prefer a spicier kick, add more hot sauce to the honey BBQ sauce or sprinkle some cayenne pepper in the cornflake coating.
- To save time, prepare the honey BBQ sauce ahead and warm it just before serving.
- Make sure the chicken pieces are evenly coated to ensure a consistent crunch in every bite.
- If you don’t have cornflakes, crushed panko breadcrumbs can be used as an alternative.
