This simple and straightforward recipe teaches you how to cook a perfectly seared and oven-finished ribeye steak, delivering a juicy and flavorful result with a crisp crust and tender interior.

  • Total Time: 20-22 minutes
  • Yield: 4 servings

Ingredients

Steak

  • 2 (1-inch thick) ribeye beef steaks (any cut will do)

Seasoning and Cooking

  • 1-2 Tablespoons oil (canola or avocado oil recommended for high smoke point)
  • Kosher salt, to taste
  • Ground black pepper, to taste
  • 1-2 Tablespoons unsalted butter (or garlic herb butter for finishing)

Instructions

  1. Let Sit: Remove the steaks from the fridge and allow them to come to room temperature, about 15 to 30 minutes. This ensures even cooking throughout the steak.
  2. Preheat Oven and Skillet: Preheat your oven to 450°F (232°C). Place a large skillet inside the oven as it heats to get it very hot. Once heated, carefully remove the skillet from the oven and place it on the stove over high heat.
  3. Season and Sear: Pat the steaks dry thoroughly with paper towels. Rub the steaks on all sides with the oil, then generously season both sides with kosher salt and black pepper. Carefully place the steaks into the hot skillet and sear each side for 1-2 minutes until a brown crust forms. Use tongs to flip the steaks gently.
  4. Bake in Oven: Transfer the skillet with the steaks into the preheated oven. Bake the first side for 4 minutes, then flip the steaks and bake the other side for an additional 4 to 6 minutes. Use a meat thermometer or slice to check doneness; remove the steaks about 5°F before they reach your target temperature as carryover heat will finish cooking.
  5. Let Rest: Remove the skillet from the oven using an oven mitt and set it on a heatproof surface. Let the steaks rest on a plate for 5 minutes to allow juices to redistribute. Top each steak with a slab of butter to melt and add extra flavor before serving.

Notes

  • Resting the steak is crucial to keep it juicy; do not skip this step.
  • For rare, cook to an internal temperature of 120-125°F; medium rare 130-135°F; medium 140-145°F; medium well 150-155°F; well done 160°F and above.
  • Drying the steak before seasoning ensures better browning and searing.
  • Using a cast iron skillet helps achieve a superior crust due to its heat retention.
  • Butter adds richness and can be replaced with garlic herb butter for added flavor.
