Ingredients
Batter Ingredients
- 2-1/2 cups whole milk
- 2 cups all-purpose flour (spooned and leveled)
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 4 tablespoons unsalted butter (melted and slightly cooled)
- 2 teaspoons vanilla extract
- 4 large eggs
For Cooking
- 2 to 3 tablespoons unsalted butter (melted, for cooking the crepes)
Toppings (optional)
- Powdered sugar
- Whipped cream
- Syrup
- Other preferred fillings and toppings
Instructions
- Combine: In a high-powered blender, add milk, all-purpose flour, sugar, salt, melted and cooled butter, vanilla extract, and eggs. Pulse on low speed about 10–15 times until smooth and lump-free, taking care not to over-beat the batter.
- Refrigerate: Scrape down the sides and bottom of the blender to ensure all flour is incorporated. Pulse a few more times if needed. Cover the batter and refrigerate for 1 hour or overnight to develop flavor and reduce bubbling during cooking.
- Prepare for Cooking: Cut small squares of parchment paper to place between cooked crepes to prevent sticking.
- Heat Pan: Place an 8 to 10-inch nonstick pan over medium to medium-low heat. Stir the chilled batter before using. Have a tray or platter with parchment paper ready.
- Cook: Lightly butter the pan with melted butter using a pastry brush or paper towel. Pour 1/4 cup of the batter into the pan, then immediately tilt and swirl the pan to evenly coat the bottom with a thin layer.
- Continue Cooking: Cook for 1–2 minutes until the bottom is golden brown. Use an offset or rubber spatula to lift an edge and flip the crepe. Cook the other side until golden brown spots appear, about 1–2 minutes more. Transfer the crepe to a tray and cover with parchment paper.
- Finish: Repeat the cooking process with remaining batter, adjusting heat as needed to prevent burning or undercooking.
- Serve: Fill crepes with preferred fillings, fold in half, then in half again to form triangles. Optionally sprinkle with powdered sugar, top with whipped cream, and drizzle syrup before serving.
Notes
- Resting the batter in the refrigerator for at least 1 hour is essential for flavor and texture improvement.
- Use parchment paper between crepes after cooking to prevent sticking.
- Use a nonstick pan and moderate heat to ensure even cooking and easy flipping.
- Fill crepes with sweet or savory fillings as desired.
