Ingredients
Pickling Solution
- 1/2 cup apple cider vinegar
- 1 tablespoon granulated sugar
- 1 1/2 teaspoons salt
- 1 cup hot water (not boiling)
Onions
- 1 red onion, thinly sliced (use a mandoline if you have one)
Instructions
- Slice the Onions: Thinly slice the red onion as thin as possible using a mandoline or a sharp knife to ensure even pickling.
- Pack the Jar: Stuff all the sliced red onions into a clean jar or bowl. Using a jar makes storage and pickling easier.
- Make the Pickling Liquid: In a measuring cup, combine apple cider vinegar, granulated sugar, salt, and hot water. Stir until the sugar and salt completely dissolve.
- Pour and Immerse: Pour the pickling liquid over the onions in the jar, ensuring all the onions are fully submerged to allow even pickling.
- Pickle: Let the onions sit at room temperature for about one hour to pickle and develop their flavor.
- Store: After an hour, cover the jar and refrigerate. The pickled onions will keep for up to three weeks, making them a handy condiment for multiple meals.
Notes
- Other varieties of onions can be used as a substitute for red onions.
- Maple syrup or honey can replace granulated sugar if you prefer a different sweetener.
- Adjust the amount of sweetener depending on whether you want sweeter or tangier pickled onions.
- You can substitute apple cider vinegar with white distilled vinegar, rice vinegar, or white wine vinegar. A combination of vinegars works well too.
- This recipe can be easily doubled; just make sure you have enough jars and keep the onions fully immersed in the pickling liquid.
