Ingredients
Whole Beets
- 1 bunch fresh beets (about 3-4 medium size)
- 1 tablespoon olive oil or avocado oil
- 1 teaspoon Kosher salt
- 1/2 teaspoon ground black pepper
Sliced or Chopped Beets
- 1 bunch fresh beets (about 3-4 medium size)
- 1 tablespoon olive oil or avocado oil
- 1 teaspoon Kosher salt
- 1/2 teaspoon ground black pepper
Instructions
- Prepare the beets. Cut off the leafy tops of the beets if still attached, saving the greens for other uses. Scrub the beets thoroughly under running water to remove dirt, then lightly pat dry.
- Roast whole beets. Preheat oven to 400°F. Place beets in a foil packet, drizzle with olive oil, season with salt and pepper, seal the packet and place on a baking sheet on the middle rack. Roast for 45-50 minutes until fork tender, checking occasionally to avoid overcooking.
- Cool and peel whole beets. Let beets cool until easy to handle, then use a clean paper towel to rub and remove the skins which should slide off easily. Discard skin.
- Slice or chop whole beets. Cut the peeled beets into slices or cubes as preferred. Serve immediately or store in an airtight container refrigerated for up to 7 days.
- Prepare sliced or chopped beets. Peel the beets with a vegetable peeler (wear gloves if desired to avoid staining). Cut beets into half moons or 1-inch cubes. Use a plastic or silicone cutting board to avoid staining.
- Season and roast sliced beets. Spread the cut beets on a lined baking sheet, drizzle with olive oil, sprinkle with salt and pepper, and toss lightly. Roast in the oven at 400°F for 12-15 minutes until edges are crispy and centers are tender.
- Cool and serve sliced beets. Remove from oven and let cool a few minutes. Enjoy roasted beets on salads, as a side dish, or a healthy snack.
Notes
- You can save beet greens to cook in stir-fries or soups.
- Use foil packets when roasting whole beets to retain moisture and cook evenly.
- Wear gloves when peeling sliced beets to avoid staining hands.
- Avoid wooden cutting boards for cutting beets as they may stain.
- Check whole beets for doneness by piercing with a fork; they should be tender.
- Store cooked beets in an airtight container in the refrigerator for up to 7 days.
