4.1 from 3 reviews

This indulgent Ice Cream Pie features alternating layers of creamy caramel and fudge brownie ice cream nestled in a buttery graham cracker crust. Easy to assemble with no baking required, it's perfect for a refreshing dessert that can be customized with your favorite toppings. The pie is frozen to ensure a firm, delightful texture and is served in generous slices for sharing.

  • Total Time: 1 hour 25 minutes (including freezing time)
  • Yield: 8 servings

Ingredients

Crust

  • 1 graham cracker crust (9-inch)

Ice Cream

  • 36 ounces caramel ice cream
  • 36 ounces fudge brownie ice cream

Toppings (optional)

  • Whipped cream
  • Chocolate sauce
  • Caramel sauce

Instructions

  1. Prepare: Remove the plastic lid from the graham cracker crust, but keep it for later use to help shape the pie.
  2. Fill: Scoop one flavor of ice cream (caramel) into the graham cracker crust in a circular pattern. Alternate with scoops of the fudge brownie ice cream next to it, continuing around the crust to fill it. Gently press each scoop down with the back of a spoon to compact the layer.
  3. Layer: Repeat the scooping and layering process to create a second layer of alternating ice cream flavors over the first.
  4. Shape: Place the plastic lid back onto the ice cream-filled crust and press gently to compress and shape the pie layers evenly.
  5. Freeze: Transfer the pie to the freezer and allow it to fully harden. Be careful to keep the ice cream firm during assembly to prevent the pie from becoming icy when refrozen.
  6. Serve: Once the pie is completely frozen and firm, cut it into large slices. Optionally, top each slice with whipped cream and a drizzle of chocolate or caramel sauce. Store any leftovers in the freezer to maintain firmness.

Notes

  • Use good-quality caramel and fudge brownie ice creams for best flavor and texture.
  • Optional toppings such as whipped cream, chocolate sauce, or caramel sauce add extra richness and presentation appeal.
  • Cut the pie into large slices for serving to best enjoy the creamy layers.
