A quick and nourishing Indian Overnight Oats recipe infused with aromatic cardamom and saffron, packed with chia seeds and crunchy pistachios. Perfect for a healthy, make-ahead breakfast that’s creamy, flavorful, and naturally sweetened.

  • Total Time: 6 hours 2 minutes (including chilling time)
  • Yield: 2 servings

Ingredients

Overnight Oats Mixture

  • 1 cup Rolled oats
  • 1 cup Milk (preferably full fat)
  • 2 tablespoons sugar
  • 2 teaspoons Chia seeds
  • 1/4 teaspoon cardamom powder
  • 1 pinch salt
  • 1 pinch saffron (crushed with your fingertips)

Topping

  • 3 tablespoons raw pistachios (chopped)

Instructions

  1. Combine Ingredients: In a mason jar or any container, add the rolled oats, milk, sugar, chia seeds, cardamom powder, salt, and crushed saffron. Stir the mixture thoroughly until all ingredients are well incorporated.
  2. Chill Overnight: Cover the jar/container securely and place it in the refrigerator. Allow the oats to soak and flavors to meld for at least 6 hours or up to 2 days for best results.
  3. Serve & Garnish: Before serving, stir in half of the chopped pistachios and taste for sweetness. Add more sugar if desired. Finally, top your oats with the remaining pistachios for a delightful crunchy texture and enjoy.

Notes

  • Use full-fat milk for creamier texture; substitute with plant-based milk for a vegan option.
  • Chia seeds help thicken the oats and add omega-3 fatty acids.
  • The saffron and cardamom give a distinct and authentic Indian flavor profile.
  • Adjust sugar quantity to suit personal preference or use honey/agave as alternatives.
  • Overnight oats can be stored refrigerated for up to 2 days safely.
