Ingredients
Spices and Seasonings
- 2 tsp Oil
- 1 tsp Mustard Seeds
- 2 tsp Cumin Seeds
- 1/2 tsp Red Chili Powder
- 1/4 tsp Turmeric Powder
- 1 tsp Salt (divided)
Vegetables
- 5 Shallots, peeled and chopped
- 10 oz Baby Kale, washed and tough stems removed
Others
- 2 tbsp Water
Instructions
- Prep Work: Wash the kale thoroughly and remove the hard stems. Peel and chop the shallots finely to prepare for cooking.
- Preheat the Instant Pot: Set your Instant Pot to sauté mode and allow it to heat up. Once hot, add the oil to the pot.
- Add Mustard and Cumin Seeds: Add the mustard seeds and cumin seeds to the hot oil. Let them splutter and release their aromas, which activates the flavors.
- Sauté Shallots: Add the chopped shallots to the pot. Cook them for a couple of minutes until they are softened and fragrant.
- Add Kale and Spices: Add the baby kale to the pot along with turmeric powder and half of the salt. Sprinkle 2 tablespoons of water. Mix gently to combine, noting it can be a bit challenging to mix 10 oz of kale with limited space.
- Pressure Cook: Switch the Instant Pot to Manual/Pressure Cook mode and set the timer for 1 minute. This allows the kale to cook quickly while retaining nutrients.
- Release Pressure: As soon as the cooking time is up and the Instant Pot beeps, carefully and quickly release the pressure manually.
- Final Sauté and Seasoning: Once the pressure is fully released and the lid is opened, switch back to sauté mode. Add the remaining salt and red chili powder, then mix well.
- Finish Cooking: Cook the kale stir fry for an additional 2-3 minutes in sauté mode to enhance flavors and reduce any excess moisture.
- Serve: Your healthy and flavorful Instant Pot kale stir fry is ready to serve as a delicious side or light meal.
Notes
- If you prefer a spicier dish, increase the red chili powder according to taste.
- Baby kale is preferred for this recipe due to its tender texture; mature kale can be used but may require longer cooking.
- Use fresh spices for best flavor, and adjust salt to personal preference.
- Be cautious when releasing pressure from the Instant Pot to avoid burns.
- This recipe is great for meal prep as it stores well in the refrigerator for up to 3 days.
