Jalapeno Peach Chicken is a vibrant and flavorful dish featuring tender chicken thighs cooked with sweet yellow peaches and spicy jalapenos, finished with a tangy peach glaze. This recipe balances heat and sweetness perfectly, making it a delightful meal for a quick weeknight dinner.

  • Total Time: 31 minutes
  • Yield: 4 servings

Ingredients

Peaches

  • 2 yellow peaches, pitted, sliced

Peach Glaze

  • ½ cup (160 g) peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic, minced
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes

Chicken

  • 2 pounds boneless, skinless chicken thighs
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 1 medium jalapeno pepper, thinly sliced

Instructions

  1. Prepare the Peach Glaze: In a medium bowl, combine peach preserves, extra virgin olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Stir well until all ingredients are fully incorporated. Set the glaze aside for later use.
  2. Season the Chicken: Pat the chicken thighs dry with paper towels to ensure a nice sear. In a small bowl, mix together kosher salt, black pepper, and chili powder, then evenly apply this seasoning blend to all sides of the chicken thighs.
  3. Cook the Chicken: Heat 2 tablespoons of extra virgin olive oil in a large nonstick skillet over medium heat. Once hot, add the seasoned chicken thighs in a single layer—if necessary, cook in batches to avoid overcrowding. Sear the chicken for 5 minutes on one side, then flip and reduce the heat to medium-low. Continue cooking for another 5 minutes, or until the internal temperature reaches 165°F (74°C). Remove the chicken from the skillet and transfer to a plate, tenting with foil to keep warm.
  4. Sauté Jalapenos and Peaches: Increase the heat back to medium in the same skillet and add the thinly sliced jalapeno peppers. Cook for about 3 minutes, stirring occasionally. Next, add the sliced peaches to the skillet and cook for an additional 3 minutes until the peaches are softened but still retain their shape.
  5. Add the Peach Glaze: Pour the prepared peach glaze over the peaches and jalapenos in the skillet. Stir gently to coat all the ingredients evenly with the glaze, enhancing the flavors and creating a glossy sauce.
  6. Combine Chicken and Glaze: Return the cooked chicken thighs to the skillet, nestling them into the peaches and jalapenos. Spoon more glaze over the chicken pieces and cook for another 1-2 minutes to heat through and meld all flavors together.
  7. Serve Warm: Plate the chicken with the peach and jalapeno mixture spooned over the top. Serve immediately for the best flavor and texture experience.

Notes

  • Use ripe but firm peaches to avoid them turning too mushy during cooking.
  • If you prefer less heat, remove the jalapeno seeds before slicing.
  • Chicken thighs provide juicier results, but you can substitute with boneless chicken breasts if preferred—adjust cooking time accordingly.
  • Serve with rice or a fresh salad to balance the sweet and spicy flavors.
  • The glaze can be prepared ahead of time and refrigerated for convenience.
