Ingredients
For the Filling and Wrap
- 1 tablespoon olive oil
- 10 ounces ground beef
- 2 tablespoons taco spice
- ¼ cup sour cream
- 2 cups shredded iceberg lettuce
- ½ cup diced tomatoes
- 4 carb-free tortillas
- Sea salt to taste
For the Nacho Cheese Sauce
- ½ cup shredded cheddar cheese
- ¼ cup heavy cream
- ½ teaspoon cumin powder
- Pinch of cayenne pepper
Instructions
- Heat the skillet: Heat 1 tablespoon of olive oil in a cast-iron skillet over medium-high heat to prepare for cooking the ground beef.
- Cook the beef: Add 10 ounces of ground beef to the skillet. Stir in 2 tablespoons of taco spice and season with sea salt as needed. Cook, stirring occasionally, until the beef is evenly browned and fully cooked through.
- Prepare the nacho cheese sauce: In a microwave-safe bowl, combine ½ cup shredded cheddar cheese, ¼ cup heavy cream, ½ teaspoon cumin powder, and a pinch of cayenne pepper. Microwave the mixture in 15-second intervals, stirring between each interval, until the cheese is fully melted and the sauce is smooth.
- Assemble the crunchwrap: Lay one carb-free tortilla flat on a plate. Spread a layer of the nacho cheese sauce on the tortilla, then add a layer of cooked ground beef, followed by shredded iceberg lettuce, diced tomatoes, and a dollop of sour cream.
- Fold the crunchwrap: Fold the edges of the tortilla toward the center, creating pleats to enclose the filling securely.
- Toast the crunchwrap: Place the folded crunchwrap seam-side down on a hot skillet. Toast for 1 to 2 minutes per side, or until the tortilla is golden brown and crisp.
- Serve and enjoy: Remove from the skillet and serve hot for a delicious keto-friendly meal or snack.
Notes
- Use carb-free tortillas to keep this recipe keto-friendly.
- Adjust taco seasoning and cayenne pepper to your preferred spice level.
- You can substitute ground beef with ground turkey or chicken if desired.
- If you don’t have a cast-iron skillet, a non-stick skillet will work as well.
- For a creamier sauce, you can add a little extra heavy cream as needed while melting the cheese.
