These Lemon Brownies are a tender, moist, and delightfully tangy treat perfect for summer. Made with fresh lemon juice and zest, they offer a refreshing twist on traditional brownies. Easy to prepare and topped with a zesty lemon glaze, these brownies balance sweetness and citrus flavor for an irresistible dessert that keeps you coming back for more.

  • Total Time: 42 to 48 minutes
  • Yield: 12 servings

Ingredients

Main Ingredients

  • 1 ½ cup all-purpose flour (spoon and level)
  • 1 cup butter (8 oz), at room temperature
  • 1 ½ cup granulated sugar
  • 3 Tablespoons lemon juice (about 1 lemon)
  • 2 teaspoons lemon zest (zest of one lemon)
  • ½ teaspoon baking powder
  • 2 eggs, at room temperature

Lemon Glaze

  • ¾ cup powdered sugar
  • 1 ½ Tablespoons lemon juice
  • Zest of ½ lemon

Instructions

  1. Preheat Oven and Prepare Pan: Preheat the oven to 350°F (175°C). Line a 9” x 13” baking pan with parchment paper and set it aside to keep the brownies from sticking.
  2. Cream Butter and Sugar: In a medium-sized bowl, beat the butter until creamy. Gradually add granulated sugar and continue beating for a couple of minutes until the mixture is soft and fluffy, which will help create a light texture.
  3. Add Eggs: Add the eggs one at a time, beating well after each addition to incorporate air and ensure a smooth batter.
  4. Incorporate Lemon Flavor: Stir in the lemon zest and lemon juice into the batter, combining them evenly to infuse the signature lemon flavor throughout.
  5. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour and baking powder to ensure even leavening.
  6. Combine Wet and Dry Ingredients: Fold the dry ingredients into the lemon batter using a silicone spatula, mixing just until combined to maintain a tender crumb.
  7. Pour Batter and Bake: Pour the batter into the prepared pan and smooth the top evenly with the spatula. Bake for 22-25 minutes, checking for a brownish edge and a set center. Bake for closer to 22 minutes for fudgier brownies, or 25-28 minutes for a more spongy texture.
  8. Cool and Unmold: Once baked, let the brownies cool completely to room temperature in the pan before lifting them out using the parchment paper for easy slicing.
  9. Prepare Lemon Glaze: Mix together powdered sugar, lemon juice, and lemon zest in a small bowl until smooth and pourable.
  10. Glaze and Serve: Coat the cooled brownies evenly with the lemon glaze and allow it to set until hardened. Slice into squares and enjoy this tangy and sweet treat!

Notes

  • For a more intense lemon flavor, use freshly squeezed lemon juice and finely grated zest.
  • Room temperature ingredients like butter and eggs will blend more smoothly for a better batter consistency.
  • Using parchment paper makes removing and slicing the brownies much easier.
  • Adjust baking time depending on your texture preference—shorter for fudgy, longer for cakey brownies.
  • Store leftover brownies in an airtight container at room temperature for up to 3 days.
