Ingredients
Dry Ingredients
- 2 cups chopped raw cashews
- 10 Medjool dates (pitted)
- 1/2 cup shredded unsweetened coconut
- 1 tablespoon chia seeds
- Pinch of salt
Wet Ingredients
- 1 tablespoon lemon zest (about 1 lemon)
- 1/2 tablespoon lemon juice
Instructions
- Make Cashew Meal: Place the chopped raw cashews in a high-speed blender and process on high for about 1 minute or until the cashews turn into a fine cashew meal.
- Form Dough: Add the Medjool dates (pitted), lemon zest, lemon juice, shredded coconut, and a pinch of salt to the blender with the cashew meal. Blend on high for 2-3 minutes or until a sticky dough forms.
- Add Chia Seeds: Add the tablespoon of chia seeds and pulse the blender a few times until the chia seeds are evenly incorporated into the dough.
- Shape Energy Balls: Use a tablespoon cookie scoop to form the dough into truffle-sized balls. If the dough is not sticky enough to hold together, add lemon juice by the teaspoon until it reaches the desired consistency.
- Store: Store the energy balls in the refrigerator for immediate use or freeze half of them for later consumption, up to several weeks.
Notes
- Ensure dates are pitted before blending to avoid any pits in the mixture.
- If dough is too dry, lemon juice can be added gradually to help bind.
- These energy balls keep well refrigerated for up to 1 week or frozen for up to 1 month.
- Use a high-speed blender for the best texture and easier processing.
- Perfect for a quick, healthy snack or on-the-go energy boost.
