Ingredients
Oat Crumble
- 1¼ cups all-purpose flour
- 1¼ cups old-fashioned oats (not quick oats)
- ½ cup granulated sugar
- ½ cup light brown sugar, packed
- ½ teaspoon baking soda
- 12 tablespoons salted butter, melted
- 1 teaspoon vanilla extract
Creamy Lemon Filling
- 1 can (14 oz) sweetened condensed milk
- 1 tablespoon lemon zest (about 2 large lemons)
- ⅓ cup freshly squeezed lemon juice (about 3 large lemons)
- 2 large egg yolks
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350℉ (175℃). Spray a 9×9-inch square baking pan with cooking spray or line it with parchment paper for easy removal and cutting. Set aside.
- Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, old-fashioned oats, granulated sugar, light brown sugar, and baking soda until all ingredients are combined evenly.
- Add Wet Ingredients to Crumble: Stir melted salted butter and vanilla extract into the dry mixture until the mixture resembles coarse, wet sand and is evenly moistened.
- Form Crust: Firmly press half of the crumb mixture into the bottom of the prepared baking pan to form the crust. Reserve the remaining half for topping. Bake the crust for 11-12 minutes, then remove from the oven and allow it to cool slightly while preparing the filling.
- Prepare Lemon Filling: In a bowl, combine the sweetened condensed milk, lemon zest, freshly squeezed lemon juice, and egg yolks. Stir until smooth and well blended.
- Assemble Bars: Pour the lemon filling over the slightly cooled crust. Evenly sprinkle the reserved oatmeal crumble mixture over the top and gently press it down.
- Bake Bars: Bake the assembled bars for 22-25 minutes. The center will appear pale and slightly loose or jiggly, while the edges should be golden brown. This is normal as the bars will firm up while cooling.
- Cool and Chill: Remove the pan from the oven and let the bars cool completely in the pan. Once at room temperature, cover with a lid or plastic wrap and refrigerate for 1-2 hours to allow the bars to set fully.
- Serve: Cut into 12 squares and serve chilled. Store leftover bars in the refrigerator for best taste and texture.
Notes
- Use old-fashioned oats rather than quick oats to maintain the crumbly texture.
- For easier removal, lining the pan with parchment paper is recommended.
- The filling will seem loose when hot but will firm up upon chilling.
- Bars keep well refrigerated for up to 3-4 days.
- Adjust lemon juice and zest to your preference for tartness.
- The recipe yields 12 bars, perfect for sharing or storing.
